1 shallot, minced
1/2 teaspoon Dijon mustard
2 tablespoons white wine vinegar

Steps:

  • Mix the jam, thyme, and salt and pepper to taste in a bowl.
  • Lay out a long piece of plastic wrap on a cutting board. Place the chicken on the plastic and brush half of the jam mixture evenly on top of each breast. Mound a quarter of the cheese on each piece of chicken, then wrap 2 slices of ham around each breast to cover the cheese. Place another piece of plastic over the chicken and gently pound with a mallet or heavy skillet until about 1/4 inch thick.
  • Heat 2 tablespoons olive oil in a medium nonstick skillet over medium-high heat. Add the chicken and cook until golden and crisp, 3 to 4 minutes. Turn and cook on the other side until cooked through but still moist, 3 to 4 more minutes.

Six 10-ounce chicken breasts, pounded out to 1/2 inch in thickness
12 ounces thin-sliced ham
6 ounces Gruyere cheese
Breading:
3 cups all-purpose flour
2 cups ground breadcrumbs (biscuit crumbs preferred)
2 cups wheat flour
1 cup rice flour
1 tablespoon Cajun seasoning
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon salt
1 tablespoon freshly ground black pepper
1/2 teaspoon cayenne pepper
12 eggs, well beaten
4 egg yolks
Pinch fine salt
Pinch white pepper
Pinch paprika
1/4 teaspoon lemon juice
1/4 teaspoon hot sauce
1 pound clarified butter, warmed until soft

1/2 pound Gruyere, grated
1/4 cup all-purpose flour

1 cup panko bread crumbs
4 sprigs fresh thyme, leaves only
1 clove garlic, peeled and finely minced
2 tablespoons unsalted butter, melted

  • Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. 4 thin slices smoked ham
2 ounces Swiss cheese, cut into 4 equal "fingers"
1/4 cup flour

I made this one up after not being able to find boneless thighs for a proper ckicken cordon blue recipe.(I was dining with someone who doesn't care for breasts! So when i saw the ground chicken this came to mind. I thought same taste, just a little twist. I serve with ready made chicken gravy drizzled on top, and usually with a vegetable to round out the meal. It is probable going to be around in my kitchen forever! Once a week my family wants this!
