½ pound almonds
8 cups all-purpose flour
¼ pound unsweetened cocoa powder
2 tablespoons baking powder
2 tablespoons ground cinnamon
1 teaspoon salt
3 cups white sugar
1 ½ cups shortening
6 eggs
1 (6 ounce) can evaporated milk
1 teaspoon vanilla extract
1 cup confectioners' sugar
¼ teaspoon almond extract
1 tablespoon water, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spread almonds onto a baking sheet.
  • Bake almonds until toasted and fragrant, 5 to 10 minutes. Remove baking sheet from oven and cool almonds slightly; chop.
  • Sift flour 2 times. Mix cocoa powder, baking powder, cinnamon, and salt together with flour in a bowl. Beat white sugar, shortening, and eggs together in a separate bowl using an electric mixer until smooth and creamy.
  • Mix creamed mixture into flour mixture. Add almonds, evaporated milk, and vanilla extract to flour mixture and mix well using your hands or a large spoon until dough holds together and is smooth. Roll dough into 1-inch balls and place on a baking sheet.
  • Bake in the oven until bottoms are slightly brown, about 10 minutes. Transfer cookies to a wire rack to cool completely.

8 ounces sweetened shredded coconut
One 12-ounce bag semisweet chocolate morsels, melted
1 tablespoon shortening

Steps:

  • In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.
  • After the balls have set up, melt the chocolate and shortening until smooth. Dip into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.

  • *"Toffee"/Dulce De Leche can be purchase already prepared - or can be made at home through a process of heating Sweetened Condensed Milk - Recipes/instructions can be found online.
  • Crush Digestive Biscuits in a large plastic bag.
  • Pour into a large bowl and add Banana and about half the can of Dulce De Leche.
  • Use a fork to mash and incorporate the banana and toffee into the biscuit crumbs. Add additional Toffee as needed - just enough to coat all the biscuit crumbs without it becoming too sticky.
  • Form the mixture into 1 inch (2 ½ cm) balls and freeze for 15 minutes until firm.
  • Microwave chocolate for 60 Seconds - stopping after 30 seconds to check and stir.
  • Remove balls from freezer and dip into the melted chocolate.
  • Set on wax paper and sprinkle with additional biscuit crumbs (optional).

1 cup heavy cream
1/4 teaspoon salt

Steps:

  • Microwave chocolate, cream and salt in a large bowl, stirring occasionally until smooth- about 2 minutes.
  • Refrigerate until firm- about 2 hours. Roll 3 TBS chilled chocolate mixture into ten 2 " balls. Individually wrap balls in saran wrap and transfer balls to a large Ziploc.
  • Freeze.

1 cup chopped nuts (almonds, hazelnuts, walnuts, brazil nuts, pick your favourite)
3/4 cup sweetened condensed milk

chocolate sprinkles or finely grated chocolate, if preferred

  • In the top of a double boiler over hot (but not boiling) water, melt the chocolate chips.
  • Stir in nuts, condensed milk, vanilla and salt.
