kosher salt (as needed)

1 cup tomatoes (chopped)
1 cup cucumber (diced, ¼-inch thick)
½ cup red onion (thinly sliced)
½ cup red bell pepper (diced, ¼-inch thick)
4 ounces feta cheese (crumbled)
½ cup walnuts (roughly chopped)
¼ cup lemon juice (plus zest of one lemon)
½ cup olive oil
1 tablespoon dijon mustard
1 teaspoon honey
2 cloves garlic (minced)
8 basil leaves (fresh )
½ teaspoon dried oregano (or 1 teaspoon fresh)
¼ teaspoon kosher salt

1 (1/4 ounce) packet gelatin
1/4 cup hot water
1/2 cup boiling water
1 teaspoon salt
1/4 cup fresh lemon juice
2 (8 ounce) cans salmon (7 1/2 ounce size)
1 cup cottage cheese
1/2 cup green relish
1/2 cup mayonnaise
1 cup celery
1/4 cup fresh parsley
2 tablespoons chives

Steps:

  • Sprinkle gelatin on cold water and let soften 5 minutes.
  • Add boiling water, stir until dissolved.
  • Stir in salt, lemon juice and liquid from salmon. Cool.
