Yield Makes about 50 cookies

Number Of Ingredients 8

1 stick (1/2 cup) unsalted butter, softened
2/3 firmly packed light brown sugar
1-1/2 tablespoons freshly grated lemon zest
l large egg yolk
1/4 cup fresh lemon juice
1/4 teaspoon vanilla
1/4 teaspoon salt
3/4 cup all-purpose flour

Steps:

  • In a bowl with an electric mixer cream the butter with the brown sugar and the zest until the mixture is light and fluffy and beat in the yolk, the lemon juice, the vanilla, and the salt. Add the flour, sifted, and beat the mixture until it is just combined well. Drop teaspoons of the batter 2 inches apart onto well-buttered baking sheets and bake the cookies in batches in the middle of a preheated 350°F. oven for 8 to 10 minutes, or until they are golden around the edges. Let the cookies cool on the sheet for 1 minute, or until they are just firm enough to be removed, and transfer them to racks to cool.

Tips:

  • Prep your baking sheets. Line them with parchment paper or silicone baking mats to prevent the cookies from sticking. This will make cleanup a breeze.
  • Chill the dough before baking. This helps the cookies hold their shape and prevents them from spreading too much in the oven.
  • Don't overmix the dough. Overmixing can make the cookies tough. Mix just until the ingredients are combined.
  • Bake the cookies at the right temperature. The oven temperature will vary depending on the recipe, so be sure to check the recipe carefully.
  • Let the cookies cool completely before storing them. This will help them keep their shape and flavor.

Conclusion:

Lemon Thins are a classic cookie that is perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make perfect Lemon Thins that will be enjoyed by everyone.
