Found this recipe on "simply recipes". I wanted to make lemonade from scratch, real freshly squeezed lemons and simple syrup and I came across this recipe. Made this for my 6 year old and friends' lemonade stand sales, my pitcher never came home. Turns out my friend who helped the kids with the stand, liked my lemonade better than the powdered stuff, kept my lemonade for herself! Please do adjust to taste, I think the lemons I had were more tart so I added more simple syrup.

Most of us make lemonade just out of lemon juice, but as you may know, the oils in the lemon peel contain a tremendous amount of flavor, and once you drink this, you won't want to go back to drinking it how you used to.

6 lemons
1 ¼ cups white sugar
5 cups cold water

Steps:

  • Wash lemons and peel off all the zest using a vegetable peeler. Set peeled lemons aside. Add the lemon zest to a bowl and cover with sugar. Toss to combine. Cover and let sit for a minimum of 2 hours, or up to overnight.
  • Bring water to a boil in a pot over high heat; turn off heat and pour in the lemon-sugar mixture. Stir and let sit until the sugar is completely dissolved, about 5 minutes.

Steps:

  • Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
  • Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
  • Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.

30 lemon creme cookies
6 tablespoons salted butter, melted
1 cup raspberries
3 tablespoons sugar
One 14-ounce can sweetened condensed milk
One 8-ounce package cream cheese, softened
One 3.4-ounce package instant lemon pudding mix
1/4 cup frozen pink lemonade concentrate, thawed
2 lemons, zested
2 drops red food coloring
1/4 cup fresh raspberries
Lemon zest twists, for garnish
Whipped cream, for serving

Steps:

  • For the crust: Place the cookies into the bowl of a food processor fitted with a metal blade. Process the until the cookies become fine crumbs. Add the butter and pulse to combine. Press into an 11-by-2 1/2-inch springform pan and chill in the fridge while you make the filling.
  • For the filling: Meanwhile, place the raspberries in a bowl. Smash the raspberries using the back of a fork, then sprinkle with the sugar and set aside.
  • Combine the sweetened condensed milk, cream cheese and pudding mix in the bowl of a stand mixer fitted with a whisk attachment. Mix on low until smooth, about 1 minute. Add the lemonade, lemon zest and food coloring and whip on medium-high until thick and fully combined, 2 to 3 minutes. Fold in the macerated raspberries until completely combined.
  • Pour into the chilled crust and spread evenly. Freeze for at least 2 hours. (At this point, you can wrap tightly and freeze for up to 2 months.)
  • To serve: Remove from freezer and allow to thaw slightly, 5 to 7 minutes. Garnish each slice with fresh raspberries, a lemon zest twist and a little whipped cream.
