3 tablespoons butter, melted
2 (1 gram) packets Splenda® no calorie sweetener
½ teaspoon coconut extract
½ cup heavy cream
2 (1 gram) packets Splenda® no calorie sweetener
1 (.6 ounce) package sugar-free lime-flavor Jell-O®
⅓ cup boiling water
⅓ cup cold water
2 (8 ounce) packages cream cheese, cut into pieces and softened
½ teaspoon coconut extract
2 tablespoons ground pecans

Steps:

  • In a medium bowl, mix together 1 cup ground pecans, butter, 2 packets sweetener, and 1/2 teaspoon coconut extract. Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm.
  • In a small bowl, whip the heavy cream with 2 packets sweetener until soft peaks form. Set aside.
  • In a large bowl with high sides, mix the gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth. Carefully fold in the whipped cream. Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top. Refrigerate several hours or overnight to allow gelatin to set thoroughly.

1 recipe shortbread cookies (or any low calorie cookies of choice, crushed (1 1/2 cups))
1/4 cup granulated sweetener of choice
5 tablespoon light butter (or light margarine)
2 cups Greek yogurt (non-fat)
1 cup cream cheese (non-fat or dairy free)
2 large eggs
2/3 cup granulated sweetener of choice
1/4 cup all purpose flour (gluten free, if needed)
1/4 teaspoon salt
1 tablespoon lime juice
1 teaspoon lime extract (optional)
1 13.5 oz coconut milk (chilled)
4 tablespoon sugar free powdered sugar
1 teaspoon lime extract (optional)

Steps:

  • Preheat the oven to 170C/325F. Lightly grease an 8-inch springform pan and set aside.
  • In a bowl, add your crushed cookies, sweetener, and melted butter and mix until combined. Transfer into the pan and press into place.

I use regular sugar and one can of full-fat condensed milk, but you could use Splenda and use non-fat milk for both cans. You could also use egg substitute rather than whole eggs. However, I wouldn't go any lower than reduced-fat sour cream, the non-fat is too thin and runny for a topping. And do NOT attempt this with bottled lime juice - blech. 1/3 cup sugar
4 tablespoons melted butter
1 (14 ounce) can sweetened condensed milk

1 cup low-fat sour cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 375.
  • Crush graham crackers in a ziptop bag with a rolling pin, or use a food processor.
  • Mix in sugar and butter (it's easiest to do this with your hands.).
  • Press crumb mixture into a pie plate.
  • Bake for 8-10 minutes or until crust is golden brown, and allow to cool to room temperature.
