Time 25m

Number Of Ingredients 11

1/2 cup sifted flour
1/2 cup unsweetened cocoa powder, preferably Dutch
2 teaspoons powdered instant coffee
1 teaspoon baking powder
1/8 teaspoon salt, if desired
1/4 pound sweet butter, plus butter for greasing pans
1 teaspoon pure vanilla extract
2 teaspoons dark rum or Cognac
1/2 cup granulated sugar
2 large eggs, plus 4 egg yolks
Confectioners' sugar

Steps:

  • You will need two special madeleine pans, available in fine kitchen equipment shops, to prepare these cookies.
  • Preheat the oven to 375 degrees.
  • Lightly brush the cookie indentations of each pan with butter, using a pastry brush. Take care not to leave any unbuttered spots.
  • Sift together the flour, cocoa, coffee, baking powder and salt. Set aside.
  • Place the 1/4 pound of butter in the bowl of an electric mixer and cream thoroughly. Beat in the vanilla, rum or Cognac and granulated sugar. Add the whole eggs and egg yolks and beat thoroughly. The mixture may take on a curdled look, but that is proper. Start beating on low speed while adding the dry ingredients. Beat only long enough to blend.
  • Place a rounded teaspoon of the batter into each of the cookie indentations. Do not spread; it will settle itself. Place in the oven and bake about 12 minutes or until madeleines spring back when touched with the fingertips.
  • Remove from the oven and invert onto a rack. Arrange them patterned side up on the rack. Using a sieve, dust lightly with confectioners' sugar.

Maida Heatter's Chocolate Spritz Cookies image

Heatter describes these cookies as "rich, tender, fragile, and delicate." This is a recipe for your cookie press. It is more intensely chocolate than most. Use the leftover egg whites to make meringue cookies (also called forgotten cookies). Using the search will turn up the recipe.

Time 30m

Yield 6 dozen

Number Of Ingredients 8

3 ounces semisweet chocolate (3 squares)
1/2 lb sweet butter, softened (2 sticks)
1/4 teaspoon salt
1/2 teaspoon vanilla, extraact
2/3 cup sugar
3 egg yolks
2 1/2 cups sifted flour
candied cherries, if desired or chopped nuts, for decoration if desired

Steps:

  • Preheat oven to 400 degrees F. Fit your cookie press with a favorite plate. You'll need unbuttered, unlined cookie sheets.
  • Melt chocolate in the top of a double boiler over hot, not simmering water, or melt in the microwave following manufacturer's directions. Allow to cool slightly.
  • In the large bowl of an electric mixer, cream the butter. Add the salt, vanilla and sugar and beat to mix well. Add the egg yolks and beat to mix, then add the chocolate, mixing well to blend. On low speed, gradually add the flour. Beat only to mix after each addition.
  • Fill your cookie press with a portion of the dough. Press out the cookies 1-inch apart on cookie sheets. Bake 8-10 minutes in preheated oven. Using a spatula, transfer cookies to a rack to cool. Store in airtight containers.
  • NOTE: Cookies may be decorated with chopped nuts or candied cherries before baking, if desired.

Categories     Pie

Time 1h50m

Yield 10 serving(s)

Number Of Ingredients 14

1 (10 inch) pie shells, partially baked and cooled
1/4 lb sweet butter
3 ounces unsweetened chocolate
4 large eggs
1/4 teaspoon salt
1 1/2 cups sugar
3 tablespoons light corn syrup
1/4 cup milk
1 teaspoon vanilla extract
1 tablespoon cognac (optional) or 1 tablespoon rum (optional)
2 cups heavy cream
1 teaspoon vanilla extract
1 tablespoon cognac (optional) or 1 tablespoon rum (optional)
1/4 cup powdered sugar

Steps:

  • Position oven rack 1/3 up from the bottom of oven; preheat to 350°.
  • Add butter and chocolate to the top of a double boiler over warm water on low heat.
  • Cover until partially melted, then uncover and stir until completely melted and smooth.
  • Remove the top of the double boiler and set aside, uncovered, to cool slightly.
  • Meanwhile, in a large bowl beat (use electric mixer) the eggs well.
  • Except for the chocolate/butter mixture, add all the remaining ingredients; beat well.
  • Then beat in the chocolate and butter mixture.
  • Turn into the prepared, partially baked crust; the filling will come almost to the top of the crust.
  • Handle very carefully and place in the oven.
  • Bake for 50 minutes; do not bake any longer even if the filling appears soft.
  • Turn oven heat off; prop the oven door partially open, and let the pie stand in the oven until it is completely cool (the filling will puff up during baking and then will settle down to a thin layer that will crack while cooling).
  • Refrigerate for several hours.
  • Whipped cream: in a chilled bowl with chilled beaters, whip the cream with the remaining ingredients until it will just hold a shape.
  • Shortly before serving spread the cream in a thick layer over the top of the pie.

Tips:

  • Mise en place: Before you start baking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any mishaps.
  • Use high-quality ingredients: The quality of your ingredients will have a big impact on the final product. Use the best chocolate you can find, and make sure your butter is fresh.
  • Don't overmix the batter: Overmixing the batter will make the madeleines tough. Mix just until the ingredients are combined.
  • Let the batter rest: Letting the batter rest for at least 30 minutes will help it develop flavor and rise better.
  • Use a hot oven: Madeleines should be baked in a hot oven to ensure that they rise quickly and evenly.
  • Don't overbake the madeleines: Madeleines are best when they are slightly underbaked. They should be golden brown on the outside and slightly soft on the inside.

Conclusion:

Maida Heatter's chocolate madeleines are a delicious and classic French pastry. They are perfect for a special occasion or a simple afternoon treat. With a little care and attention, you can easily make these madeleines at home.
