Yield Makes 9 servings

Streusel
1/3 cup finely chopped lightly salted dry-roasted macadamia nuts
1/4 cup sugar
2 1/2 tablespoons finely chopped crystallized ginger
Gingerbread
2 cups all purpose flour
3/4 cup (packed) golden brown sugar
1 1/2 tablespoons ground ginger
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 pound ripe mangoes, peeled, pitted
1/2 cup buttermilk
1/4 cup canola oil
2 large eggs

Steps:

  • For streusel:
  • Stir all ingredients in small bowl to blend.
  • For gingerbread:
  • Position rack in center of oven and preheat to 350°F. Butter 9x9x2-inch metal baking pan. Whisk first 6 ingredients in medium bowl to blend. Coarsely puree mangoes in food processor. Transfer 1 cup mango puree to large bowl (reserve any remaining puree for another use). Add buttermilk, oil, and eggs to puree; whisk until blended. Add flour mixture; stir just until combined. Transfer half of batter (about 2 cups) to prepared pan. Sprinkle half of streusel over. Spoon remaining batter over, smooth evenly with spatula, then sprinkle with remaining streusel.
  • Bake bread until springy to touch and tester inserted into center comes out clean, about 45 minutes. Cool completely in pan on rack. (Can be made 8 hours ahead. Cover and store at room temperature.) Cut bread into 9 squares and serve.
  • Baker's wisdom:
  • Buttermilk and baking soda help give the gingerbread a tender texture.

MANGO MACADAMIA NUT CRISP

Mango Macadamia Nut Crisp image

Provided by Food Network

Number Of Ingredients 12

4 large mangos, peeled and diced, about 2 quarts
1 tablespoon peeled, grated gingeroot
1/2 cup packed dark brown sugar
1/4 cup clover honey
1 recipe Oatmeal Macadamia Nut Streusel (recipe follows)
3/4 cup all-purpose flour
1/4 cup oatmeal
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/2 cup cold butter, cut into small pieces
1/4 cup chopped, toasted macadamia nuts
1/4 cup toasted, flaked, unsweetened coconut (optional)

Steps:

  • Preheat oven to 350 degrees. Place the diced mango and the grated ginger in a saucepan and place over medium-low heat. Cook mango slowly, stirring until it releases its juice and begins to simmer, about 5 to 7 minutes. Simmer about 3 minutes more until mango is tender and juices are bubbly. Remove mango pieces with a slotted spoon to a small bowl. Leave mango juice in pan and bring to a boil. Stirring constantly, boil the mango juice until it is reduced by 3/4 and is syrupy. Scrape syrup into bowl with mango and add brown sugar and honey. Stir gently to combine. Transfer mango to a lightly buttered 2-quart shallow bake pan (a round 9-inch cake pan works as well). Sprinkle the Oatmeal Macadamia Nut Streusel over the mango filling, covering evenly. Place baking dish on a cookie sheet (to catch any bubbling filling) and place in the oven. Bake 25-30 minutes until streusel is golden and the filling is bubbly. Cool to room temperature before serving.
  • Combine flour, oatmeal and both sugars in the bowl of a food processor. Pulse to mix well. Add the butter to the bowl, replace the top and pulse the machine to incorporate the butter. Work quickly and use short pulses to make a dry, loose, fluffy mixture resembling sand. Do not allow the butter to soften or make a dough. Transfer the streusel to a small bowl and add the nuts and coconut. Toss by hand to mix well. Reserve until needed.

Categories     Mango

Time 40m

Yield 6 serving(s)

Number Of Ingredients 18

1/2 cup mango, chopped
1/2 cup dry white wine
2 tablespoons sugar
1 teaspoon fresh ginger, peeled and minced
2 limes, juiced
1/4 cup heavy cream
1/2 cup cold unsalted butter, cut into small pieces
salt
black pepper, freshly ground
1/2 cup macadamia nuts, chopped
2 cups panko breadcrumbs
1/2 cup fresh basil
1/2 cup mayonnaise
2 teaspoons sriracha sauce (Thai Garlic Chili Sauce)
36 ounces red snapper fillets
salt
black pepper, freshly ground
canola oil, for sauteing

Steps:

  • In a saucepan, combine the mango, wine, sugar, ginger, and lime juice and simmer over medium heat for 5 minutes, until thick and syrupy. Add the cream, mix well, and remove from the heat. Pour into a blender and blend until smooth (or use an immersion blender). Return to the saucepan and simmer over low heat for 8 minutes, until the mixture thickens slightly. Add the butter, a piece at a time, and stir until incorporated before adding the next piece. Be careful not to boil the sauce, or it will separate. Season with salt and pepper and keep warm.
  • Preheat the oven to 450 degrees.
  • Place the nuts, panko and basil in a food processor and process until fine. Spread on a plate. In a bowl, combine the mayonnaise and Sriracha (chile paste) and mix well. Lightly season the fish with salt and pepper. Evenly spread a light coat of the chile mayonnaise on one side of each fish fillet. Coat the same side evenly with the nut coating.
  • In an ovenproof saute pan or skillet, pour in just enough oil to coat the bottom and heat over medium heat. (Be careful not to heat the pan too hot or the macadamia nuts will burn). Add the fish, crust side down, and saute for 3 minutes, until golden brown. Turn the fish and place in the oven for 5 minutes, until cooked through and firm to the touch.
  • Place the fillets on warmed individual places. Serve with the mango-lime butter.

Tips:

  • Selecting Ripe Mangoes: Choose mangoes that have a deep, golden-yellow hue and yield slightly when gently pressed. Avoid mangoes with green or bruised skin.
  • Preparing the Mango Puree: To achieve a smooth puree, blend the mango chunks until they are completely liquefied. Make sure there are no lumps or fibers.
  • Measuring Flour: Use the spoon and level method to measure the flour accurately. Scoop the flour into the measuring cup using a spoon and level it off with a knife or straight edge.
  • Mixing the Batter: Avoid overmixing the batter. Overmixing can result in a tough and dense gingerbread. Mix the ingredients just until they are well combined.
  • Baking the Gingerbread: Preheat the oven to the correct temperature before baking the gingerbread. This ensures even baking and prevents the gingerbread from becoming dry or undercooked.
  • Making the Macadamia Streusel: Use a food processor to combine the ingredients for the streusel. This will help create a crumbly and even mixture.
  • Chilling the Gingerbread: After baking, let the gingerbread cool completely before chilling it. Chilling the gingerbread helps set the flavors and makes it easier to cut and serve.

This delectable mango gingerbread with macadamia streusel is a delightful fusion of tropical and classic flavors.
