Steps:
- In a jar with a tight fitting lid, combine the olive oil, wine vinegar, pimento, parsley, green onion, garlic, sugar, basil, salt and pepper. Shake vigorously to blend. Set aside.
- Cut the block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 inch slices to form squares. Repeat with cream cheese. Arrange cheese squares alternately in a shallow baking dish with slices standing on edge. You can arrange in a single long row, or 2 parallel rows depending on the size of your dish. Pour the marinade from the jar over the cheese slices, cover and refrigerate for at least 6 hours, or overnight.
- To serve, remove slices to a serving platter so they are still arranged in an alternating pattern. Spoon some of the extra marinade over the cheese, and serve with crackers.

Tips:
- Use a variety of cheeses for different flavors and textures. Soft cheeses like Brie and Camembert are great for marinating, as they absorb the flavors well. Harder cheeses like Parmesan and cheddar can also be marinated, but they will take longer to absorb the flavors.
- Choose a marinade that complements the cheese. A simple marinade made with olive oil, herbs, and spices is a great starting point. You can also add other ingredients to the marinade, such as citrus fruits, honey, or balsamic vinegar.
- Marinate the cheese for at least 4 hours, or overnight for best results. The longer the cheese marinates, the more flavorful it will be.
- Serve the marinated cheese with crackers, bread, or fruit. You can also use it in salads, sandwiches, or pasta dishes.
Conclusion:
Marinated cheese is a delicious and versatile appetizer or snack. It's easy to make and can be tailored to your own taste preferences. With a variety of cheeses and marinades to choose from, the possibilities are endless. So next time you're looking for something new and exciting to serve, give marinated cheese a try. You won't be disappointed!
