1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 cup pecans, chopped
1 cup dates, chopped
2 tablespoons white syrup

3 cups Rice Krispies
1 (14 ounce) bag coconut

  • Cook the first 7 ingredients over medium head for 8 minutes.

1 (8-ounce) package of chopped dates
1/2 cup butter
2 egg yolks
2/3 cup sugar
2 teaspoons vanilla
2 cups rice krispies
1 cup chopped pecans
Coconut, to taste

Steps:

  • Melt butter in a heavy skillet, over medium heat. Stir in egg yolks, dates, and sugar to combine. Cook for about 10 minutes, stirring constantly, until mixture is thick and dates are mostly soft and incorporated. Remove from heat and stir in the vanilla, pecans and rice krispies. When mixture is cool enough to handle, roll into walnut size balls and roll in coconut. Keep in an air-tight container.

1 1/2 cups boiling water
1 cup quick-cooking oats
1 cup sugar
1 cup light brown sugar
1/2 cup shortening
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons butter, melted
1/2 cup light brown sugar
1 teaspoon vanilla
1/4 cup evaporated milk
1 cup chopped pecans
1 cup shredded coconut

Steps:

  • Preheat oven to 350°F.
  • Pour boiling water over quick oats and let stand for about 15-20 minutes, while you begin mixing up the cake.

2 cup(s) butter (some use oil)
5 cup(s) flour
5 - eggs
4 teaspoon(s) soda
1 teaspoon(s) salt
