MINCEMEAT

Mincemeat image

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. This recipe uses butter instead of the traditional suet, which makes this mincemeat suitable for vegetarians. Store in the refrigerator for up to 6 weeks.

MINCEMEAT PIE FILLING

Mincemeat Pie Filling image

A friend gave me this recipe for mincemeat many years ago. It is so good that even those who do not care for mincemeat pie likes it. If preferred, use molasses instead of sorghum. Also, apricot juice can be substituted for the pineapple juice. This makes enough filling for 2 (9 inch) pies.

GREEN TOMATO MOCK MINCEMEAT PIE

Green Tomato Mock Mincemeat Pie image

This recipe is 'The Holidays' for me. I remember the smell filling the house 60 years ago when my mom was cooking it. At the end of the tomato season, when the remaining tomatoes in the garden will not ripen, this is a great use for them. A note from my mother: I put a heaping teaspoon of tapioca on the bottom crust before I fill it. It will absorb some of the liquid.

Roll out dough on floured surface to 17-inch round. Using 2 1/2-inch-diameter cookie cutter, cut out 18 dough rounds. Press 1 round into bottom and up sides of each muffin cup. Using 1 3/4- to 2-inch-diameter cookie cutter, cut out 18 more dough rounds (reroll dough if necessary). Fill crust in each muffin cup with 1 heaping teaspoon filling. Brush edges of smaller dough rounds with some of egg glaze. Place 1 round atop filling in each muffin cup, glazed side down, pressing dough edges to seal. Cut small X in center of each pie. (Can be made 4 hours ahead. Cover pies and remaining glaze separately and chill.)
  • Preheat oven to 375°F. Brush pies with remaining egg glaze. Bake until crusts are golden, about 20 minutes. Using small knife, cut around pies to loosen; turn out onto rack. Serve warm or at room temperature.

MAINE VENISON MINCEMEAT

Maine Venison Mincemeat image

Venison mincemeat is an old Maine tradition. The deer neck is normally used, but any scrap bones can provide the boiled meat. Moose or Beef also makes good mincemeat if venison is not available.

Yield 15 pies

Number Of Ingredients 11

1 deer, neck
5 gallons whole apples (I prefer Wolf River)
1 lb raisins
4 cups sugar
1 cup molasses
1 orange
1 lemon
1 -2 pint apple cider
1 tablespoon clove
1 1/2 tablespoons cinnamon
brandy

Steps:

  • Boil the deer neck in enough water to keep it covered, for 4 hours or until the bones come out clean.
  • Whilst the neck is boiling, peel, core and chop the apples.
  • Let pot of meat cool overnight.
  • Grind the meat, and 1 cup solid suet that forms on top, through a fine plate, quarter and grind the lemon and orange (peel and all)
  • Combine everything except 1 pt of cider in a large pot.
  • Simmer over very low heat, stirring with care not to burn on. I cook mine on a wood cook stove. A hot top also works well.
  • Adjust the consistency with the cider, depending on how much juice the apples produce.
  • Simmer for 45 minutes or so, until the mixture is bubbling, but apples are still mostly whole.
  • Add brandy to taste.
  • Pack into quart mason jars hot, or plastic containers cool and freeze for pies.

Tips for Making the Best Mincemeat

  • Use a variety of dried fruits. This will give your mincemeat a more complex flavor and texture. Some good options include raisins, currants, sultanas, and chopped dates.
  • Don't be afraid to experiment with different spices. Common spices used in mincemeat include cinnamon, nutmeg, cloves, and allspice. However, you can also add other spices, such as ginger, cardamom, or mace, to taste.
  • Let your mincemeat mature for a few weeks before using it. This will allow the flavors to meld and develop. If you're short on time, you can still use your mincemeat right away, but it won't be as flavorful.
  • Mincemeat can be used in a variety of dishes, including pies, tarts, and cookies. It can also be used as a spread for toast or crackers.

Conclusion

Mincemeat is a delicious and versatile ingredient that can be used in a variety of dishes. With a little planning and effort, you can make your own homemade mincemeat that is sure to impress your family and friends. So next time you're looking for a festive and flavorful treat, give mincemeat a try.
