6 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
2/3 cup strong brewed coffee
3 tablespoons plus 2 teaspoons dark rum
3 large eggs
3/4 cup granulated sugar
2 cups chilled heavy cream
1 1/2 tablespoons confectioners sugar
Special Equipment
an instant-read thermometer

Steps:

  • Melt chocolate in coffee in a metal bowl set over a large saucepan of barely simmering water, stirring until smooth, then stir in 3 tablespoons rum. Remove bowl from heat.
  • Beat together eggs, granulated sugar, and a pinch of salt with a handheld electric mixer in a large metal bowl until combined well. Set bowl over saucepan of simmering water and beat mixture until tripled in volume, very thick, and registers 160°F on thermometer, about 6 minutes. Remove bowl from heat, then beat in chocolate mixture. Chill until cool, about 10 minutes.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the parfait will taste. Use strong coffee, rich chocolate, and creamy milk.
  • Make the parfait ahead of time: Parfaits can be made up to a day in advance. This makes them a great option for breakfast or brunch on the go.
  • Get creative with your toppings: There are endless possibilities when it comes to toppings for parfaits. Try using fresh fruit, nuts, granola, or whipped cream.
  • Use a variety of textures: Parfaits should have a variety of textures to keep them interesting. Try using crunchy granola, creamy yogurt, and soft fruit.
  • Serve the parfaits immediately: Parfaits are best served immediately after they are made. This will prevent the layers from getting soggy.

Conclusion:

Mocha latte parfaits offer the perfect flavor combination of strong coffee, rich chocolate, and creamy milk. They are an easy and delicious make-ahead breakfast or brunch option, and you can customize them to your liking with different toppings. Whether you like them simple or fancy, these satisfying parfaits are sure to be a hit.
