1/2 cup cornflake crumbs
1/4 cup milk
2 tablespoons finely chopped green pepper

12 Popsicle sticks
COATING:
1 egg
1/4 cup milk
2 cups cornflake crumbs
Oil for frying

Steps:

  • In a large bowl, combine the first five ingredients. Crumble ground meat over mixture and mix well. Shape a 1/4 cupful of meat mixture around each Popsicle stick to resemble a 3-in. log., In a shallow bowl, whisk egg and milk. Place cornflake crumbs in another shallow bowl. Coat each leg in crumbs, then dip in egg mixture and recoat in crumbs. Let stand for 5 minutes. Preheat oven to 350°., In an electric skillet, heat 1/4 in. oil to 375°. Fry legs, a few at a time, for 1 minute on each side or until golden brown. Drain on paper towels. , Arrange on an ungreased baking sheet. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes.

1 1/2 lb lean ground pork
1 1/2 lb lean ground veal
1 tsp each: salt and onion powder
1/2 tsp each: ground black pepper and poultry seasoning
EGG COATING
2 large eggs (beaten well)
1/3 c milk
BREAD COATING
1 c fine, dry bread crumbs
FOR FRYING
1/3 c shortening
OPTIONAL INGREDIENTS
3/4 c meat stock or water

  • 1. Mix all mock chicken leg ingredients together well. Form into chicken drum stick shapes.
  • 2. Beat together the egg and milk. Dip the "drum sticks" into egg and milk mixture.
  • 3. Put Bread crumbs in a bowl. Dip the "drum sticks" into the bread crumbs to totally coat them.
  • 4. PAN FRIED METHOD: .
  • 5. Fry the "drum sticks" in shortening in a medium-hot skillet. Turning to brown on all sides.

2 cups all-purpose flour
1/4 teaspoon seasoning salt
1/2 teaspoon black pepper
1/4 cup oil or 1/4 cup lard (for frying)

4 tablespoons cooking fat
1/4 teaspoon salt
1/2 teaspoon black pepper, depending on taste
3 cups milk

Steps:

  • Mix 2 cups flour with salt and pepper.

1 cup walnuts, chopped
1 (15 ounce) can le seuer peas, drained
1 hard-boiled eggs or 2 egg whites

  • Put the walnuts in a processor and process till fine.

1 Cup Dried Lentils
2 Chicken Bouillon Cubes
1 Tsp EVOO
1 Large Onion, chopped

  • Place water, lentils, and bouillon cubes in a pot. Bring to a boil,reduce heat to a simmer, and cook about 30 minutes, until tender (but not mushy.) Drain well. Saute the onion in olive oil in a skillet until it becomes transparent. Combine all ingredient a food processor and grind until the texture is as preferred. Season to taste with salt and pepper. Chill. Extras: I usually dry toast the walnuts in a skillet until the nuts were beginning to color and they were fragrant. When the onions were almost done, I splashed about a jigger of brandy over them and reduced that until the onions were almost dry and then did that again. I seasoned the onions over heat with about 1 tsp each dried thyme, smoked paprika, and garlic powder. I added about a half teaspoon of ground allspice. I added a Tbs of brandy when I processed the ingredients. Options: I have added 1/2 to 1 tsp cumin because it adds a "meaty" flavor. I have also added chopped fresh sage when I have it. I have added chopped parsley. I have added a bit of lemon juice when the Pate`needed "something." The mayo sauce was Hellmann's lo fat Mayonnaise and sweet/spicy mustard (about 4 to 1) mixed together. Capers would be good on top or mixed in.

4 chicken breasts, cubed

  • In a large skillet, saute onion in oil. When softened add in chicken. Cook until no longer pink.

VEGAN MOCK CHICKEN NOODLE SOUP

My wife is a vegetarian but was sick one day and was craving some soup. This is what I came up with. I've found that the smaller you chop the seitan, the better the results. This recipe is vegan, but I've also made it for myself substituting with one can of canned chicken, 5 cans chicken stock, and 2 tablespoons of butter and it turned out great, too. If you can't locate vegan noodles, the shirataki noodles make a great substitute, but remember to rinse them in water and slice them in half with scissors before adding to the soup. The cayenne pepper really helps with a stuffy nose, but can be safely omitted without sacrificing flavor. As with all recipes, taste throughout, adjust spices if needed as dry spices lose their potency over time.

  • Bring 2 tbsp of oil and margarine to medium heat in a large pot.

Veal glace de viande can sometimes be purchased, but is expensive, $40-50 per pint, and if you look at the list of ingredients, often has additives and other adulterants, which make it easier to make. This recipe is "the real thing", is easy to make, though time consuming, and much cheaper than the imitations you can buy. A little goes a long, long way, and it stores indefinitely in the freezer. Just knock off a couple tablespoonfuls, and add to any sauce to flavor it. This recipe provides double savings, since chicken is often on sale, and veal is rarely on sale at a decent price. This chicken glace de viande tastes almost identical to veal glace de viande.

10 lbs chicken legs with thigh (** Wait until they are on sale to make this!)
1 1/2-2 lbs bone-in country-style pork ribs
extra virgin olive oil, as needed
2 -3 large onions, unpeeled,quartered
5 -6 cloves garlic, unpeeled,lightly crushed
3 -4 stalks celery, with leaves if possible,cut in 2 inch pieces
3 -4 large carrots, scrubbed and cut in 2 inch pieces
2 plum tomatoes, quartered
1 bunch parsley stems (or 1 bunch parsley if desired)
3 -4 large bay leaves
1 1/2 teaspoons whole black peppercorns

Steps:

  • Combine all ingredients in a large (at least 12 quart) stock pot, fill three-quarters full with COLD water, and bring to a slow boil, skimming off any scum that rises to the surface.
  • Add more water to bring level to 1" from top of pot, and return to a boil.
  • Partially cover, if desired, and adjust heat so stock stays at an active simmer or very slow boil (should be bubbling lightly).
  • Simmer for at least 24 hours, adding more water every couple of hours as needed.
  • While sleeping, just reduce the heat slightly, cover completely, and go to bed; top up with water, increase heat, and return to a boil in the morning.
  • When done cooking, skim as much grease as possible from surface, and strain the broth into another container, pressing gently on the solids to extract as much stock as possible.
  • Discard solids.
  • Scrub pot well, and return to stovetop.
  • Degrease stock as completely as possible, and return to the pot.
  • You should have 4-5 quarts of stock at this point.
  • Bring to a full rolling boil, and reduce by about 90% (yes, until only 2-2½ cups of thick syrup or paste remains).
  • You only have to pay close attention to the reducing stock for about the last 15-20 minutes to ensure the pot doesn’t burn dry.
  • Allow to cool to room temperature, and transfer to a 1 quart Ziploc plastic bag.
  • Squeeze out all air, seal, and press to flatten.
  • Refrigerate until solidified, then freeze until needed.
  • To Use: Use in any recipe that calls for veal glace de viande or just a small amount of demiglace (which is probably calling for demiglace in error; they really mean glace de viande).
  • If the recipe calls for more than a couple tablespoons of demiglace, it probably really means demiglace, but you can still use a smaller amount of this.
  • Glace de viande can also be used to enrich any gravy or sauce, by just stirring in 1-2 Tbsp.
  • Just cut or break off a small chunk of the frozen glace de viande, and stir it into the sauce.
  • Just remember, this stuff is potent, equivalent to 10 times the amount of rich stock as the amount of glace de viande being used (1 Tbsp glace de viande= about 5 fl oz stock).

1 Tbsp olive oil
1/2 large onion, diced
1/2 bunch celery, chopped with leaves
4-6 carrots, sliced in 1/4 inch medallions
2 large potatoes, peeled and diced
2 tsp black pepper
2 tsp salt
3 qt golden vegetable stock (not tomatoe-based)
2 1/2 tsp curry powder
1/4 tsp powdered rosemary
2 1/2 tsp dried parsley
cooked noodles (your choice)

Steps:

  • 1. In a Large stock pot, saute Onions, celery, and carrots in Olive oil until onions are transparent. Add Salt and pepper.
  • 2. Turn up the heat and add Vegetable stock and potatoes. Bring to a boil, and then simmer until potatoes are tender. Add Curry, rosemary, and parsley. Taste, and adjust seasonings to your liking!
  • 3. Ladle over bowls of warm noodles and serve! Eat it up, it's GOOD for you! :)
