I've never been able to find whoopie pies this good! My grandmother always made them -- the secret is in the filling. I give them out at Christmas time, everyone looks forward to them. The recipe makes extra filling -- doubles as a great cake frosting!

⅔ cup vegetable shortening
2 cups white sugar
2 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
1 cup unsweetened cocoa powder
2 teaspoons baking soda
2 cups milk
3 cups milk
9 tablespoons all-purpose flour
1 ½ cups vegetable shortening
1 ½ cups butter
2 ¼ cups white sugar
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • To make cookies, beat 2/3 cup of vegetable shortening with 2 cups of sugar in a large mixing bowl with an electric mixer until the mixture is creamy. 3/4 cup granulated sugar
1/2 cup mashed ripe banana
1 large egg
1/2 teaspoon ground cinnamon
1 1/4 cups plain flour
1 teaspoon baking powder
1/2 cup quick-cooking oats
2 tablespoons unsalted butter, softened
2 ounces cream cheese
1 cup powdered sugar

Steps:

  • Preheat the oven to 350oF and line a cookie sheet with baking paper.
  • In a large bowl mix the oil, sugar, mashed banana, egg and cinnamon together. Fold in the flour, baking powder and oats. Let the batter sit for 10 minutes to thicken up slightly.

I myself used dark brown sugar is that is what I had and I misread the recipe using the entire teaspoon vanilla in the batter then adding the extra in the filling. Came out wonderful.

1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup mashed banana
1/2 cup sour cream
4 ounces unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
16 ounces cream cheese, softened
1 cup confectioners' sugar, plus
more confectioners' sugar, for dusting

Steps:

FILLING:
1 package (8 ounces) cream cheese, softened
1 cup creamy peanut butter
3 tablespoons butter, softened
1 cup confectioners' sugar
