NORWEGIAN BUTTER COOKIES
An easy Norwegian Butter Cookies recipe

Steps:
- Preheat oven to 350°F.
- Sift together flour, baking powder, and salt.
- Beat together butter, sugar, and extracts in a large bowl with an electric mixer at moderately high speed until pale and fluffy, about 3 minutes. Add egg and beat well. Add flour mixture and mix at low speed until just combined.
- Quarter dough and put 1 piece into cookie press. Holding press slightly above ungreased baking sheets, squeeze out dough to form cookies (follow manufacturer's instructions), spacing them about 3 inches apart. Form more cookies with remaining dough in same manner.
- Bake cookies in batches in middle of oven until edges are golden, 10 to 15 minutes, then transfer with a metal spatula to racks to cool.

Steps:
- Combine butter, egg yolks and brown sugar with mixer.
- Add flour gradually.
- Form 1 in balls.
- Dip the ball in egg whites and then roll the ball in chopped walnuts.
- Place on ungreased baking sheet.
- Create an indentation in the center of the ball and fill it with jam or preserves.
- Bake at 350 degrees F. for 20 minutes.

- Mix ingredients in order, chill and roll. Cut cookies about 3 inches round. Make the topping by beating three egg whites stiff. Add 1/2 lb of powdered sugar and continue beating until thick. Then add 1 (8oz) package coconut flakes. Put tablespoon of meringue on top before baking. Bake cookies for 10 to 12 minutes at 350 degrees.

- Beat together 1 egg and sugar with an electric mixer until thick and pale. Sift in flour and baking powder and add butter. Beat on low speed until mixture forms a dough. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
- Preheat oven to 350°F.
- Lightly beat remaining egg. Roll level teaspoons of dough into balls and arrange 1 inch apart on ungreased baking sheets. Press thumb into center of each ball to flatten, leaving a depression, and brush lightly with egg. Sprinkle crushed sugar in centers and bake in batches in middle of oven until golden, 12 to 18 minutes. Transfer to racks to cool completely.

- In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg and extracts; beat until well. Add flour and nuts; beat just until moistened. Cover and chill 1 hour or until firm enough to handle., Preheat oven to 350°. Shape into 1-in. balls; place 2 in. apart on parchment-lined baking sheets. Steps:
- Beat egg yolks, sugar and salt in a large bowl until thickened.
- Beat in cognac & heavy cream.
- Stir in flour & cardamom until dough forms. Knead dough on floured work surface. Cover & chill 4-8 hours.
- Heat vegetable oil in deep fryer to 365 degrees. Roll dough out on floured work surface. Do this a little at a time and VERY thinly.
- Cut dough into strips, then into diamonds 2x4".
- Cut vertical slit in middle of each diamond and "thread" one end through slit.
- Fry cookies a few at a time. Flip as they rise to surface and cook until golden and lightly puffed.
- Drain on paper towels & let cool. Sprinkle with powdered sugar & serve.
