3 tablespoons canola oil
2 large eggs, room temperature
3 medium ripe bananas, mashed (about 1-1/4 cups)
3/4 cup orange juice
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup chopped walnuts

Steps:

  • In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. 3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 beaten egg
1 cup milk
2 -3 teaspoons finely shredded orange peel
1/4 cup orange juice

2/3 cup oat bran
1/2 cup lightly packed brown sugar
1 tablespoon baking powder
1 teaspoon baking soda

2/3 cup dried cranberries
1/3 cup chopped walnuts, and or 1/3 cup pecans
1 cup plain yogurt
3 tablespoons oil
2 eggs
2 tablespoons frozen orange juice concentrate, thawed
2 teaspoons orange zest
1 cup grated carrot
1 cup grated unpeeled zucchini

  • Preheat oven to 350F Spray or butter 9x5 loaf pan.
