2 lbs sweet potatoes (approx. 2 large potatoes)
1 tablespoon olive oil
1 tablespoon paprika
1 teaspoon ground cumin
salt

Steps:

  • Preheat the oven to 425.
  • Wash and clean potatoes.
  • In a large bowl, stir together the olive oil, paprika, and cumin and set aside.
  • Cut the potatoes into medium"french fries".
  • Toss the potatoes in the oil and spices until well coated.
  • Arrange the potatoes in a single layer on a baking sheet prepared with cooking spray or lightly oiled.
  • Bake for 25 to 40 minutes, stirring occasionally, until the fries are golden and crisp.
  • Sprinkle with salt to taste and serve immediately.

2 medium sweet potatoes, washed and dried
1 Tbsp olive oil, extra virgin
1 Tbsp parmesan cheese, grated
1 tsp smoked paprika (more if you like)
1 tsp coarse salt
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp cumin

Steps:

  • 1. Preheat oven to 450 degrees.
  • 2. Cut potatoes into 1/4″ thin strips, or to desired thickness. NOTE: you can peel or not peel the potatoes. Soak potatoes in ice water for 30 minutes. Drain and blot dry with paper towels.
  • 3. Combine the dry ingredients in a ziploc bag. Add potatoes to bag; drizzle oil over potatoes. Seal bag and shake to coat potatoes with seasoning.
  • 4. Spread the potatoes evenly on a baking sheet prepared with parchment paper. Don't overcrowd the sheet, or have multiple layers of fries.
  • 5. Place in oven and bake 20-25 minutes. (May take more or less time, depending on the size of the fries.) Remove once the edges slightly begin to brown and fries begin to crisp.
