1 cup oil
2 cups sugar
3 eggs
1/2 teaspoon vanilla
2 cups flour
1 tablespoon salt

2 tsp lemon juice
2 eggs, slightly beaten
2 cups sugar
3 cups all purpose flour (sifted)
1 tsp baking powder
1 tsp baking soda

3/4 cup vegetable oil
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees F. Spray 9"x12" baking pan with Pam. Peel and chop apples and place in large mixing bowl with lemon juice and stir until well coated. Set aside.
  • In small mixing bowl cream eggs and sugar with mixer. Set aside. In large mixing bowl sift together dry ingredients. Add in egg mixture and mix. Stir in oil and mix well. Fold in apples, nuts and vanilla. Stir to mix well and spoon into baking dish.
