Creamy Saffron Pasta Recipe with Shrimp & Spinach image

Number Of Ingredients 11

-2 tbsp extra virgin olive oil
-12 jumbo shrimp
-2 cloves garlic
-1/2 onion
-1/2 tsp GOLDEN saffron threads
-1/4 cup white wine
-2 cups tightly packed bagged spinach
-1/2 cup Greek yogurt
-generous 1 cup whole wheat penne pasta
-sea salt
-freshly cracked black pepper

Steps:

  • Finely mince 2 cloves of garlic, finely dice 1/2 of an onion, grab 2 cups of tightly packed bagged spinach and roughly chop, grab 12 jumbo shrimp that have been peeled and deveined, pat them dry with paper towels and season with sea salt and freshly cracked black pepper, measure out a generous cup of whole wheat penne pasta
  • Fill a sauce pan a little over half way with water, season generously with sea salt, add a drizzle of extra virgin olive oil and heat with a high heat
  • At the same time heat a frying pan with a medium heat and add 2 tablespoons of extra virgin olive oil, 2 minutes later add the shrimp into the frying pan and cook for 90 seconds per side, after a total cooking time of 3 minutes remove the shrimp from the pan set aside covered with foil paper to keep them warm, using the same pan with the same heat add the diced onions and minced garlic and mix with the oil, 3 minutes later add a 1/2 teaspoon of saffron threads, season with sea salt and freshly cracked black pepper and mix together, then add a 1/4 cup of white wine and let it simmer
  • At this point your water should be boiling in the sauce pan, add the whole wheat penne pasta and cook for 9 minutes to get the pasta perfectly al dente or follow the instructions on your pastas package
  • After simmering the wine for 2 minutes add the spinach, place a lid on the pan and lower the fire to a low heat, 2 minutes later remove the lid, season the welted spinach with sea salt and freshly cracked black pepper, turn off the heat and mix together, after it slightly cools down add 1/2 cup of Greek yogurt at room temperature, season the yogurt with sea salt and freshly cracked black pepper, add the shrimp back into the pan and mix it together until well combined, once the pasta is cooked, drain it and add it to the pan with the cream sauce and mix it all together until well incorporated, serve immediately, enjoy!

3 firm tomatoes
200g fusilli lunghi or another long, thin pasta shape
2 tbsp olive oil
3 garlic cloves , thinly sliced
100g king prawn , deveined
100g scallop , halved if very large
300g mussel , shells cleaned
150ml white wine
good pinch saffron , mixed with 3 tbsp hot water
zest 1 lemon , plus juice ½
4 tbsp single cream
small pack parsley , chopped
2 tbsp pine nuts , toased

Steps:

  • Bring a large pan of salted water to the boil and have a bowl of cold water to hand. Cut a small cross in the base of each tomato and add to the hot water, then after 15 secs, scoop out with a slotted spoon (but keep the water boiling for the pasta) and plunge into the cold water. Leave the tomatoes to cool for 30 secs, then remove. Use a small sharp knife to peel away the skin, starting at the base where you made the cross. Cut each tomato into quarters then cut out and discard the seeds and any membrane. Cut into small dice, then set aside.
  • Add the pasta to the boiling water and cook for 2 mins less than it says on the pack. Meanwhile, heat the oil in a large frying pan (you'll need to use one with a lid) and add the garlic, sizzle for 2 mins until just starting to turn golden, then push to one side of the pan. Increase the heat and add the prawns and scallops, fry for 1-2 mins until the prawns are pink and the scallops are just turning golden, then scoop out of the pan and set aside on a plate. Add the mussels, white wine, saffron (with its soaking liquid) and some seasoning. Cover the pan with a lid and leave to steam for 3 mins until the mussels open (discard any which stay closed).
  • Add the lemon zest and juice and the cream to the sauce and check the seasoning. Drain the pasta and add this too, along with the prawns, scallops and diced tomato. Toss everything together, and bubble for another 2 mins, or until the pasta has absorbed some of the sauce and is cooked through. Scatter with parsley and pine nuts and give everything a final toss together.

1/8 teaspoon crushed saffron threads
7 tablespoons fresh lemon juice, divided
6 tablespoons extra-virgin olive oil, divided
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup thinly sliced green onions
2 tablespoons drained capers
2 tablespoons minced fresh tarragon plus sprigs for garnish
1 tablespoon minced fresh dill plus sprigs for garnish
1 teaspoon sugar
1 pound cooked medium shrimp
1 cup finely chopped celery
1/2 pound Dungeness crabmeat
2 large handfuls of arugula
2 small heads of butter lettuce

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1/2 cup cooking liquid. Place 3 tablespoons hot cooking liquid in medium bowl. Sprinkle saffron over and let stand at room temperature 5 minutes. Transfer pasta to large bowl. Drizzle pasta with 1 tablespoon lemon juice and 1 tablespoon oil; toss to coat. Let stand at room temperature until cool, stirring occasionally.
  • Add mayonnaise, sour cream, green onions, capers, minced tarragon, minced dill, sugar, remaining 6 tablespoons lemon juice, and remaining 5 tablespoons oil to bowl with saffron liquid. Whisk to combine. Season saffron dressing to taste with salt and pepper. Pour dressing over pasta. Add shrimp and celery; toss to coat. Add reserved pasta cooking liquid by tablespoonfuls if mixture is dry. Add crab; toss gently. Cover and refrigerate at least 1 hour and up to 4 hours.

4 tablespoons finely minced shallots
1 large carrot, finely minced
1 stalk celery, finely minced
1 teaspoon saffron dissolved in 1/2 cup dry white wine
1/2 cup heavy cream
1 cup fish stock (or 1/4 cup clam juice mixed with 3/4 cup chicken broth)
8 ounces (net weight) peeled and deveined shrimp, cut into 1 inch pieces
8 ounces scallops, "foot removed" and sliced horizontally
1 pound tomatoes, seeded and finely diced
1 pound black fettucine
1 cup thawed frozen petite peas, warmed in microwave oven

Steps:

  • The day before the party, make the base for the pasta seafood topping. Melt the butter in a skillet. When the foaming subsides, add the shallots, carrot and celery. Cover and cook over low heat for 10 to 15 minutes or until very tender and almost dissolved in butter. (If at any time the vegetables begin to stick to the skillet, add a tablespoonful of water or wine.) Uncover the skillet, add the saffron and white wine and boil over high heat until almost all of the wine has evaporated. Add the fish stock and simmer for 5 minutes. Season to taste with salt and pepper (do in advance up to this point.) Boil the pasta until al dente. While this is cooking, add the heavy cream to the skillet and simmer again until the sauce is slightly thickened. Add the shrimp and scallops and simmer just until the seafood is cooked through. Add the tomatoes and simmer just for a minute to warm them through without really cooking them. Adjust the seasoning. Drain the pasta and portion it out among 6 warm pasta bowls. Ladle the saffron seafood sauce over the top and garnish with warm microwaved peas.

3 medium zucchini, cut into thin rounds
1 pound fresh tagliolini or fettuccine
1/2 cup chicken or vegetable stock
1/2 teaspoon saffron threads
1 pound medium shrimp, peeled, deveined and cut into 1/2-inch pieces
2 ripe tomatoes, peeled, seeded and chopped
1 clove garlic, minced
10 fresh basil leaves, thinly sliced
1 tablespoon unsalted butter
