¼ cup cream cheese
¼ cup sour cream
2 ripe peaches, peeled and cut into 1-inch pieces
3 ½ tablespoons white sugar, divided, or more to taste

PEAR AND CHEESE EMPANADAS

Pear and Cheese Empanadas image

Provided by Food Network

Categories     dessert

Time 3h50m

Yield 12 empanadas

Number Of Ingredients 15

2 cups all-purpose flour
1/2 teaspoon fine sea salt
6 ounces (1 1/2 sticks) unsalted butter, cut into small pieces, at cool room temperature
1 large egg
1 large egg yolk
2 tablespoons iced water
Filling:
1 teaspoon walnut oil
1 teaspoon olive oil
1 1/2 cups ripe, peeled, cored (1/2-inch dice) D'Anjou pears
4 ounces crumbled blue cheese
1/2 cup toasted, coarsely chopped walnuts (see Note, above)
1 tablespoon chopped fresh sage
1 teaspoon fine sea salt
1/8 teaspoon freshly ground white pepper

Steps:

  • Dough: Mix the flour and salt in a medium bowl and make a well in the center. Place the butter, egg and yolk in the well. Rub the mixture between your fingertips until it forms a crumbly mass. Sprinkle with the water and knead in the bowl until it comes together into a dough. (If the dough seems too moist, sprinkle with additional flour, and knead it in briefly.) Divide the dough into 2 thick disks, and wrap each in plastic wrap. Refrigerate until chilled, about 2 hours.;
  • Filling: In a medium skillet, heat the walnut and olive oils over high heat. Add the pears and cook, stirring occasionally, until lightly browned and beginning to give off their juices, about 2 minutes. Transfer to a medium bowl and cool completely. Stir in the remaining ingredients. Cover and refrigerate until ready to use.
  • Assembly:
  • 1 large egg beaten with 1 tablespoon water, for glazing
  • If the dough is too hard to roll easily, let it stand at room temperature to warm slightly. On a lightly floured surface, working with 1 portion of dough at a time, roll into a 1/16-inch thick circle. Using a small saucer as a guide, cut out six 4 1/2-inch rounds. Repeat with the remaining dough. Place equal amounts of the filling on the lower halves of the rounds. Fold over to enclose the filling, then crimp closed with the tines of a fork. Place on a parchment paper-lined (or lightly greased) baking sheet. Cover loosely with plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 375 degrees F. Brush the empanadas lightly with the egg mixture. Bake until golden brown, 15 to 20 minutes. Serve warm.

Yield 8 to 10 servings

Number Of Ingredients 20

For peach and pecan topping:
1/4 cup (1/2 stick) unsalted butter
1/2 cup (packed) golden brown sugar
40 (about) pecan halves (about 3 ounces)
2 medium peaches (about 7 ounces each), peeled, halved, pitted, each half cut into 6 wedges
For cake:
1 1/2 cups unbleached all purpose flour
1/2 cup pecans
1 teaspoon baking powder
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
2 large eggs
2 teaspoons vanilla extract
1/2 cup whole milk
Vanilla ice cream or sweetened whipped cream
Special Equipment
9-inch-diameter cake pan with 2-inch-high sides

Steps:

  • Peach and Pecan Topping:
  • Melt butter in medium saucepan over medium heat. Add brown sugar; whisk until sugar dissolves, about 1 minute. Pour mixture into 9-inch-diameter cake pan with 2-inch-high sides; spread evenly over bottom of pan (layer will be thin). Arrange pecan halves, side by side with round sides down, in circle around outer edge of pan bottom. Arrange peach wedges, slightly overlapping, inside circle of pecans, covering pan bottom. Set aside while making cake batter.
  • Cake:
  • Position rack in center of oven; preheat to 350°F. Combine first 6 ingredients in processor. Blend until nuts are finely ground. Using electric mixer, beat sugar and butter in large bowl until butter is pale in color, about 4 minutes. Whisk eggs and vanilla in small bowl until well blended. Add egg mixture to butter mixture, 1 tablespoon at a time, beating until well blended after each addition. Add flour mixture in 3 additions alternately with milk in 2 additions, beating just until blended after each addition. Drop batter by large spoonfuls atop pecans and peaches in pan; spread evenly and gently with offset spatula or rubber spatula.
  • Bake cake until golden brown and tester inserted into center comes out clean, about 55 minutes. Transfer cake to rack; cool in pan 25 to 30 minutes (do not cool longer or peach layer may stick to pan). Run small knife around sides of cake to loosen. Place serving platter atop cake pan. Using oven mitts, firmly hold cake pan and platter together and invert cake onto platter. Let cake rest 1 minute, then very slowly lift off pan. If necessary, rearrange any peach wedges or pecans that may have become dislodged. Let cool to room temperature.
  • Cut cake into wedges. Serve with vanilla ice cream or whipped cream.

Tips:

  • Use ripe peaches for the best flavor. If your peaches are not ripe, you can ripen them by placing them in a paper bag at room temperature for a few days.
  • To make the empanada dough, you can use a food processor or a stand mixer. If you are using a food processor, pulse the ingredients until they come together. If you are using a stand mixer, beat the ingredients on low speed until they are well combined.
  • When rolling out the empanada dough, be sure to dust your work surface with flour to prevent the dough from sticking. You should also roll out the dough to a thickness of about 1/8 inch.
  • To fill the empanadas, place about 2 tablespoons of the peach and pecan filling in the center of each dough circle. Then, fold the dough over the filling and crimp the edges to seal. You can use a fork to crimp the edges, or you can use a специальный инструмент.
  • Bake the empanadas at 375 degrees Fahrenheit for about 20 minutes, or until they are golden brown. Serve them warm with a dusting of powdered sugar.

Conclusion:

Peach and pecan empanadas are a delicious and easy-to-make treat that is perfect for any occasion. They are made with a flaky pastry dough that is filled with a sweet and juicy peach and pecan filling. The empanadas are then baked until they are golden brown and served warm with a dusting of powdered sugar. If you are looking for a delicious and unique dessert, peach and pecan empanadas are a great option.
