GRILLED PEACHES WITH MOONSHINE SYRUP AND SORGHUM YOGURT

Grilled Peaches with Moonshine Syrup and Sorghum Yogurt image

Growing up in the South, I often saw moonshine. I remember how great peach moonshine tasted, so I added a smoky element and sweetened it up a bit.

Provided by Food Network

Categories     dessert

Time 20m

Yield 4 servings

Number Of Ingredients 9

4 peaches, halved and pitted
3 tablespoons sorghum, plus more for brushing
Kosher salt
2 tablespoons unsalted butter
2 cups plain Greek yogurt
1/2 cup sugar
3 tablespoons moonshine (such as Ole Smoky Charred Moonshine)
1 teaspoon pure vanilla extract
1 tablespoon grated lemon zest

Steps:

  • Preheat a grill pan to medium-high heat. Brush the cut sides of the peaches with sorghum and sprinkle with salt. Melt the butter in the hot grill pan, then lay the peaches cut-side down in the pan to start charring. Be careful not to move them, because the sugar in the sorghum will create beautiful grill marks. Cook until the edges of the peaches are bubbling and caramelized, about 2 minutes, then turn 90 degrees and cook 1 to 2 more minutes to create diamond grill marks. Remove the peaches and set aside.
  • Mix together the yogurt and sorghum in a bowl.
  • Make the moonshine syrup: Combine the sugar, moonshine, vanilla, lemon zest and 1 cup water in a medium saucepan and bring to a boil. Remove from the heat and set aside.
  • To serve, divide the peaches among bowls, spoon in the syrup and then place a large dollop of yogurt on top.

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
6 eggs, separated, at room temperature
1 1/4 cups sugar

  • In a mixer, beat the egg yolks with 1/2 cup of the sugar until pale yellow and thick ribbons. Mix in the yogurt, then the olive oil. With a spatula, fold in the reserved flour mixture.
  • Beat the egg whites to soft peaks, add remaining 3/4 cup sugar and beat to stiff peaks. Fold egg whites into the batter. Pour batter into prepared pan and bake 45 to 55 minutes, or until done. Cool on a rack, remove from pan and serve with drained yogurt, honey and chopped pistachios.

Yield 8 servings

Number Of Ingredients 13

Frozen Yogurt::
1 cup heavy cream
1 cup plain whole-milk Greek yogurt
1 cup whole milk
1/2 cup honey
2 tablespoons fresh lemon juice
Pinch of kosher salt
Peaches and Assembly:
4 large ripe peaches (about 2 pounds)
6 fresh lemon verbena leaves
1 1/2 cups Cocchi Aperitivo Americano (Italian aperitif wine)
1/2 cup sugar
1/4 cup chopped unsalted, raw pistachios

Steps:

  • Frozen Yogurt:
  • Whisk cream, yogurt, milk, honey, lemon juice, and salt in a large bowl. Process in an ice cream maker according to manufacturer's instructions.
  • Transfer frozen yogurt to an airtight container or a shallow baking pan; cover and freeze until firm, at least 2 hours.
  • Do ahead: Frozen yogurt can be made 1 week ahead. Keep frozen.
  • Peaches and assembly:
  • Using the tip of a paring knife, score an X in the bottom of each peach. Cook in a large pot of boiling water just until skins begin to peel back where cut, about 1 minute. Using a slotted spoon, transfer to a large bowl of ice water and let cool. Carefully peel peaches, reserving skins.
  • Bring lemon verbena, Cocchi Americano, sugar, reserved peach skins, and 1 1/2 cups water to a boil in a medium saucepan. Reduce heat and simmer until mixture has thickened slightly and looks syrupy, 10-12 minutes.
  • Add peaches, cover saucepan, reduce heat, and gently poach fruit until the tip of a paring knife easily slides through flesh, 12-15 minutes. (Very ripe fruit will take less time to cook.) Using a slotted spoon, transfer peaches to a plate and let cool. Cut into wedges.
  • Meanwhile, return poaching liquid to a boil and cook until reduced by half, 15-20 minutes. Let cool, then discard solids.
  • Scoop frozen yogurt into small glasses or bowls and serve topped with peaches, some reduced poaching syrup, and pistachios.
  • Do ahead: Peaches can be poached 3 days ahead. Cover and chill in poaching liquid. Bring peaches to room temperature and reduce poaching liquid just before using.

WHITE PEACHES, PISTACHIOS, HONEY AND RICOTTA

White Peaches, Pistachios, Honey and Ricotta image

This recipe is based on a dish from the chef Seamus Mullen of Tertulia in New York. It's inspired by a Catalan honey-and-cheese dessert called mel i mató, with an unexpected sprinkle of pistachios and fresh peaches. After falling ill, Mr. Mullen changed his diet to focus more on ingredients with anti-inflammatory effects. Many such foods, like stone fruits, often play a central role in the Spanish cuisine he specializes in.

Provided by Martha Rose Shulman

Time 9h15m

Yield 4 servings

Number Of Ingredients 6

1/2 pound cherries, pitted and quartered or cut into eighths, depending on the size (about 1/2-inch pieces)
2 tablespoons sugar
1 tablespoons mild honey, like clover
1/4 teaspoon almond extract
2 cups drained low-fat yogurt or low-fat Greek-style yogurt
3 tablespoons lightly toasted pistachios, finely chopped (1 ounce)

  • Spoon 1/4 cup yogurt into the bottom of each of four 7- to 8-ounce tumblers or parfait glasses. Distribute the first portion of cherries among the glasses. Sprinkle pistachios over the cherries. Repeat the layers but do not sprinkle pistachios over the top until you are ready to serve. Cover and chill for at least 1 hour. HONEYED PEACH & PISTACHIO PAVLOVA

Honeyed peach & pistachio pavlova image

Master the art of meringue and gain a kitchen skill for life. This pudding is topped with vanilla, cooked peaches and Greek yogurt

Provided by Cassie Best

Categories     Dessert

Time 1h50m

Number Of Ingredients 11

5 large egg whites
175g golden caster sugar
100g light brown sugar
1 tsp cornflour
1 tsp white wine vinegar
100ml clear honey, plus 2 tbsp
5 ripe but firm peaches , peeled if you like, and thickly sliced
300ml double cream
seeds from 1 vanilla pod, or 2 tsp vanilla bean paste with seeds
200ml Greek yogurt
85g pistachio, roughly chopped

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Using a 20cm plate or cake tin as a template, draw a circle on a large sheet of baking parchment, flip it over and place on a large baking tray. When ready, dot a blob of raw meringue onto each corner of the baking tray and put the baking parchment on top - this way it won't slip.
  • In a well-cleaned, grease-free bowl, whisk the egg whites with an electric hand whisk until they form stiff peaks. Add the caster sugar, 1 tbsp at a time, continuing to whisk as you go. The meringue will start to get thick and glossy. Add the brown sugar in the same way, continue whisking for another 1-2 mins until really thick and holding stiff, shiny peaks on the end of your whisk. Now add the cornflour and vinegar, and give a final whisk until smooth.
  • Using a large metal spoon, pile the meringue onto the parchment-lined tray, using the circle template as a guide to create a symmetrical circle. Use the spoon to make a dip in the middle (this will hold your cream and fruit later) and a few spikes of meringue around the edges. Place in the centre of the oven, shut the door and immediately turn the temperature down to 140C/120C fan/gas 1. Cook the meringue for 1 hr 10 mins, then turn the oven off and leave until completely cold (best done overnight).
  • For the topping, put the 100ml honey in a wide frying pan and heat until saucy. Add the peach slices and cook for 1-2 mins on each side, over quite a high heat, until the peaches are sticky but still holding their shape. Cool completely.
  • Just before you are ready to serve, assemble the pavlova. Tip the cream, vanilla and remaining honey into a bowl. Whisk until it just holds soft peaks, then add the yogurt and, using a spatula, fold together until combined. Spoon the cream into the centre of the meringue and swirl it out towards the edges. Top with the sticky peaches and any saucy bits from the pan, and sprinkle over the pistachios.

  • Drizzle the yogurt cup with honey or maple syrup before serving. This will add an extra touch of sweetness and help to bind the ingredients together.
  • For a more decadent yogurt cup, add a dollop of whipped cream or a sprinkling of chopped nuts.
