4 medium beets
1 tablespoon butter
1 sweet onion, chopped
¼ cup micro greens
2 tablespoons candied pecans
2 tablespoons crumbled blue cheese
⅔ cup olive oil
½ cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon honey

Tips:

  • Choose the right pecans. For the best flavor, use fresh, shelled pecans. Avoid using pecans that are old or have been stored for a long time, as they may be rancid.
  • Toast the pecans. Toasting the pecans brings out their flavor and makes them more fragrant. You can toast the pecans in a preheated oven at 350°F for 5-7 minutes, or in a skillet over medium heat for 3-5 minutes, stirring constantly.
  • Use a good quality blue cheese. The type of blue cheese you use will have a big impact on the flavor of the spread. For a classic flavor, use a sharp blue cheese, such as Roquefort or Gorgonzola. If you prefer a milder flavor, use a milder blue cheese, such as Maytag Blue or Cambozola.
  • Let the spread chill before serving. This will allow the flavors to meld together and the spread to firm up slightly.

Conclusion:

Pecan blue cheese spread is a delicious and versatile appetizer or snack. It can be served with crackers, bread, or vegetables. It can also be used as a filling for sandwiches or wraps. With its creamy texture, tangy flavor, and crunchy pecans, pecan blue cheese spread is sure to be a hit at your next party or gathering.
