Time 1h40m

Yield 8 serving(s)

Number Of Ingredients 6

4 seedless English cucumbers, thinly sliced
4 vine-ripened tomatoes, diced
1 onion, thinly sliced
1 cup apple cider vinegar
1/2 cup granulated sugar
2 (12 ounce) jars herring fillets, pickled in wine sauce (such as VitaR)

Steps:

  • Combine cucumbers, tomatoes, and onion in a large glass mixing bowl.
  • Stir vinegar and sugar together in a small saucepan over medium-low and bring to a boil; cook and stir until the sugar dissolves.
  • Pour over the vegetable mixture. Marinate mixture in the refrigerator for 30 minutes.
  • Stir the reserved liquid from the herring into the vegetable mixture. Fold herring into the vegetable mixture. Refrigerate 1 hour more before serving.

Tips:

  • Choose the freshest herring possible. Fresh herring will have a bright, silvery skin and clear eyes. Avoid any fish that looks dull or has cloudy eyes.
  • Clean the herring thoroughly. Remove the head, tail, and fins. Then, gut the fish and remove the gills. Rinse the herring inside and out with cold water.
  • Use a variety of spices and seasonings. Common spices used for pickling herring include mustard seeds, dill seeds, bay leaves, and peppercorns. You can also add herbs such as parsley, thyme, and rosemary.
  • Experiment with different pickling liquids. In addition to vinegar, you can also use brine, oil, or a combination of liquids to pickle herring. Each liquid will give the herring a different flavor.
  • Let the herring pickle for at least 24 hours before eating. The longer the herring pickles, the more flavorful it will be. However, you can enjoy it after just a few hours if you're short on time.

Conclusion:

Pickled herring is a delicious and versatile dish that can be enjoyed in a variety of ways. It can be served as an appetizer, main course, or side dish. It can also be used in salads, sandwiches, and wraps. No matter how you choose to enjoy it, pickled herring is sure to be a hit. So next time you're looking for a new and exciting way to enjoy fish, give pickled herring a try!
