HOW TO MAKE PERFECT POLENTA

How to Make Perfect Polenta image

Polenta is nothing more than coarsely ground cornmeal. The classic ratio is 1 part polenta to 4 parts water, but I like to measure the polenta just a little scant of a full cup. I often use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout.

Time 55m

Yield 4

Number Of Ingredients 5

4 cups water
1 teaspoon fine salt
1 cup polenta
3 tablespoons butter, divided
½ cup freshly grated Parmigiano-Reggiano cheese, plus more for garnish

Steps:

  • Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
  • Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
  • Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl. Top polenta with remaining 1 tablespoon butter and about 1 tablespoon freshly grated Parmigiano-Reggiano cheese for garnish.

Categories     Cake     Fruit     Nut     Dessert     Bake     Quick & Easy     Fig     Pine Nut     Cornmeal     Bon Appétit     Vegetarian     Pescatarian     Wheat/Gluten-Free     Peanut Free     Soy Free     Kosher

Yield Makes 6 servings

Number Of Ingredients 10

4 large egg yolks
2/3 cup sugar
2 cups whole milk
1/4 cup grappa
1/8 teaspoon salt
1/2 cup polenta (coarse cornmeal; do not use instant)
1/2 cup diced dried Calimyrna figs (about 6)
1/3 cup raisins
1/4 cup pine nuts
1 tablespoon fennel seeds

Steps:

  • Preheat oven to 375°F. Butter 8-inch-diameter cake pan with 2-inch-high sides. Beat egg yolks and sugar in large bowl. Bring milk, grappa, and salt to boil in heavy medium saucepan over medium heat. Gradually whisk hot milk mixture into egg yolk mixture. Return to saucepan. Whisk in polenta. Whisk over medium-high heat until mixture thickens and begins to bubble, about 8 minutes.
  • Fold figs, raisins, pine nuts, and fennel seeds into polenta mixture. Pour into prepared cake pan.
  • Bake cake until golden brown, set in center, and beginning to pull away from sides of pan, about 40 minutes. Cool in pan 20 minutes. Cut around pan sides and invert cake onto platter. Serve warm or at room temperature.

Tips:

  • Choose ripe figs: The riper the figs, the sweeter and more flavorful your cake will be.
  • Use fresh polenta: Fresh polenta will give your cake a more tender texture than dried polenta.
  • Don't overmix the batter: Overmixed batter can make your cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean: This will ensure that your cake is cooked through.
  • Let the cake cool completely before serving: This will allow the flavors to meld and the cake to set.

Conclusion:

Polenta fig cake is a delicious and unique dessert that is perfect for any occasion. It is easy to make and can be customized to your liking. Whether you like your cake sweet or tart, with or without nuts, this recipe is sure to please. So next time you are looking for a new dessert to try, give polenta fig cake a try.
