"Prosciutto and pepper risotto" is a classic Italian dish full of flavor that combines the salty, savory taste of crispy prosciutto with the spicy, aromatic flavor of roasted red peppers. The combination of these two ingredients is a match made in culinary heaven, and when they're added to a creamy, cheesy risotto, the result is a dish that is both satisfying and sophisticated. Risotto is a type of Italian rice dish cooked in a flavorful broth until it becomes creamy and tender. It is often made with arborio or carnaroli rice, which are short-grain varieties that release starch as they cook, creating a creamy texture.

PROSCIUTTO AND PEPPER RISOTTO

Prosciutto and Pepper Risotto image

I adapted this recipe as a number of people I cooked it for didn't like mushrooms but I didn't note down the original version so can't tell you what it was I'm afraid! I made this for 4 friends before and I 'm sure we had some left over so I've put the portions as 5. I personally add some extra cream in as I like the texture quite creamy and also once I added some chopped asparagus too which worked really well.

Time 30m

Yield 4

Number Of Ingredients 14

1 carton (32 oz) Progresso™ chicken broth (4 cups)
2 tablespoons extra-virgin olive oil
1 tablespoon finely chopped garlic
3/4 cup finely chopped onion
Salt
3/4 lb uncooked pastina, orzo, riso or stelline
1/4 teaspoon freshly ground pepper
2 cups frozen green peas
2 tablespoons unsalted butter
1 1/2 teaspoons finely chopped fresh oregano
1 1/2 teaspoons finely chopped fresh thyme
3/4 cup freshly grated Parmesan cheese
1/4 cup finely chopped prosciutto or bacon, cooked until very crisp, well drained
1/2 cup fresh carrot juice

Steps:

  • Bring the broth to a low simmer in a saucepan.
  • Heat the olive oil in a large saucepan over medium-high heat until hot. Add the garlic and cook briefly until light brown. Add the onion and a pinch of salt, lower the heat to medium, and cook until the onion is soft but not brown, about 2 to 3 minutes. Add 2 cups of the simmering broth and bring to a boil. Add the pastina; stir well, and reduce the heat to maintain a slow simmer. Season with salt and pepper.
  • Simmer, ladling in the broth 1/2 cup at a time as the previous addition is absorbed, and stirring occasionally to prevent the pastina from sticking to the bottom of the pan, until the pasta is about three-fourths done, about 10 minutes. Add the peas and the remaining simmering broth and cook until the peas are tender and the pasta is al dente, about 3 minutes. Remove from the heat and add 1 tablespoon of the butter, the oregano, thyme, Parmesan, and 3 tablespoons of the bacon. Stir well. The consistency should be quite loose, like a thick soup.
  • During the last few minutes of cooking, stir in the carrot juice. Whisk in the remaining 1 tablespoon butter until just melted. Top with remaining bacon.

Risotto with Artichoke Hearts, Prosciutto, and Red Bell Pepper image

Categories     Onion     Pepper     Rice     Parmesan     Artichoke     White Wine     Winter     Prosciutto     Gourmet

Yield Serves 2

Number Of Ingredients 11

2 cups chicken broth
1/2 small red bell pepper, cut into julienne strips
1/2 cup frozen artichoke hearts, cooked according to the package directions and drained
3 tablespoons olive oil
1 onion, minced
a 1/4-inch-thick slice of prosciutto, cut into 1/4-inch dice (about 1/4 cup)
1 cup Arborio rice (Italian short-grain rice, available at specialty foods shops and some supermarkets)
1/3 cup dry white wine
1/4 cup freshly grated Parmesan
1 tablespoon minced fresh parsley leaves
white pepper to taste

Steps:

  • In a small saucepan dilute the broth with 2 cups water, bring it to a boil, and keep the broth at a bare simmer. In a heavy saucepan cook the bell pepper and the artichoke hearts in 1 tablespoon of the oil over moderate heat, stirring, for 2 minutes and transfer them with a slotted spoon to a bowl. In the heavy pan cook the onion in the remaining 2 tablespoons oil over moderately low heat, stirring, until it is softened, stir in the prosciutto and the rice with a wooden spatula, and cook the mixture over moderate heat, stirring, for 1 minute, or until the rice is coated well with the oil. Add the wine and cook the mixture over moderately high heat, stirring, for 1 to 3 minutes, or until the wine is absorbed, add 1/2 cup of the simmering broth, and cook the mixture at a vigorous simmer, stirring, for 3 to 5 minutes, or until the liquid is absorbed. Continue adding the broth, about 1/2 cup at a time, stirring constantly and letting each portion be absorbed before adding the next, until only 1/2 cup of the broth remains. Stir in the vegetables and 1/3 cup of the remaining broth and simmer the mixture, stirring, for 1 minute, or until the liquid is absorbed. (The risotto should be creamy, but the rice grains should be al dente.) If necessary add the remaining broth and cook the risotto in the same manner until the rice is al dente. Remove the pan from the heat and stir in the Parmesan, the parsley, and the white pepper.

RISOTTO WITH ASPARAGUS AND PROSCIUTTO

Risotto With Asparagus And Prosciutto image

Provided by Moira Hodgson

Categories     dinner, main course

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 pound asparagus
1 quart hot chicken stock
2 tablespoons olive oil
3 tablespoons unsalted butter
3 shallots, finely chopped
1/4 pound prosciutto, chopped
Coarse salt and freshly ground pepper to taste
2 cups arborio rice
1 cup dry white wine
1 generous pinch saffron threads
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Cut the asparagus into pieces two inches long, keeping the tips separate from the stalks. Bring the chicken stock to simmer and cook the stalks until tender. Remove with a slotted spoon. Add tips and repeat process.
  • Heat the oil and two tablespoons butter in a skillet and gently soften the shallots with the prosciutto. Season with salt and pepper and add the rice. Stir with a wooden spoon to coat the grains. Let the rice cook three to four minutes, stirring so that it absorbs the butter and turns opaque.
  • Add the wine, stir, and then add the saffron.
  • Add the hot stock a ladle at a time, and cook the rice, stirring. Keep stirring and adding stock for about 20 minutes. The rice will absorb the liquid. Make sure the stock is being absorbed and that there is not much liquid on top. The bottom of the pan should be clean.
  • Start testing the rice. It is done when it is al dente. You may not need to use all the stock or you may need to add a little hot water. Be careful not to overcook the rice.
  • Just before the risotto is ready, stir in the asparagus to heat through. Stir in the remaining butter but do not return to the heat. Add the cheese, spoon the rice onto individual heated plates and sprinkle with extra cheese and ground pepper.

RISOTTO WITH FRESH FIGS AND PROSCIUTTO

Risotto with Fresh Figs and Prosciutto image

Fresh, sweet figs and salty Italian prosciutto make the perfect flavor combination in this summer risotto. Pecorino cheese adds a nutty, creamy addition to the dish. Perfect for an Italian dinner party!

Provided by Alemarsi

Categories     Main Dish Recipes     Rice     Risotto Recipes

Time 30m

Yield 4

Number Of Ingredients 9

4 cups vegetable broth
6 tablespoons butter, divided
1 tablespoon extra-virgin olive oil
1 green onion, finely chopped
1 (12 ounce) package Arborio rice
½ cup dry white wine
14 small fresh figs, divided
4 thin slices prosciutto, finely chopped
1 cup grated Pecorino-Romano cheese, or to taste

Steps:

  • Heat vegetable stock in a large pot and keep warm over low heat.
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a large, heavy-bottomed saucepan over medium-low heat. Add green onion; cook and stir until softened, about 1 minute. Pour in rice and stir until coated in butter and oil and starting to toast, 2 to 3 minutes. Increase heat and pour in wine. Simmer until alcohol has evaporated and the wine is mostly absorbed. Reduce heat to medium and stir in 1 ladle of boiling broth. Continue stirring until the rice has absorbed the liquid and turned creamy. Once the liquid has been fully absorbed, add the next ladle. Repeat this process, stirring constantly until all liquid has been used or rice is tender yet firm to the bite (al dente). Stirring in the broth should take 12 to 15 minutes in all.
  • Meanwhile, chop 10 figs. Melt 2 tablespoons butter in a medium skillet and cook chopped figs until soft and coated in butter, 4 to 5 minutes. Crush figs gently with a wooden spoon while cooking. Stir in prosciutto. Add fig-prosciutto mixture to the risotto when there are about 5 minutes left to cook.
  • Remove risotto from heat; stir in remaining 2 tablespoons butter and grated Pecorino romano cheese. Let stand for a few minutes.
  • Divide risotto evenly onto 4 plates, garnishing each with a whole fig before serving.

Tips:

  • Use high-quality ingredients. This means using the best prosciutto and Parmesan cheese you can find. The better the ingredients, the better the risotto will be.
  • Toast the rice before cooking it. This will help to develop its flavor and give the risotto a creamy texture.
  • Use a good quality white wine. A dry white wine, such as a Pinot Grigio or Sauvignon Blanc, will work well.
  • Don't overcook the rice. Risotto should be cooked until it is al dente, or slightly firm to the bite.
  • Stir the risotto constantly. This will help to prevent the rice from sticking to the bottom of the pan and will also help to create a creamy texture.
  • Add the cheese and butter at the end of cooking. This will help to create a rich and creamy sauce.
  • Serve the risotto immediately. Risotto is best enjoyed when it is fresh out of the pan.

Conclusion:

Prosciutto and pepper risotto is a delicious and easy-to-make dish that is perfect for any occasion. With its creamy texture, rich flavor, and beautiful presentation, this risotto is sure to impress your guests. So next time you're looking for a special meal to make, give prosciutto and pepper risotto a try.
