¼ cup plus 2 tablespoons natural unsweetened cocoa powder, such as Hershey's
1 teaspoon baking soda
¾ teaspoon salt
1 stick (8 tablespoons) unsalted butter, at room temperature
¾ cup plus 2 tablespoons granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350°F degrees and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt.
  • In the bowl of an electric mixer, cream the butter and sugar until light and fluffy, 1-2 minutes. Scrape down the sides of the bowl with a rubber spatula. They will crumble just a bit; don't worry about it. Turn the biscotti on their sides (so that the cut sides are down) and place back in the oven for 10 minutes to dry and crisp up. Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely. Serve with coffee, tea or warm milk.

2/3 cup sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
2 eggs
1 3/4 cups flour
4 ounces white baking bar, coarsely chopped
3 ounces semisweet chocolate, chopped

Steps:

  • Lightly grease a large cookie sheet. Set aside. In a large mixing bowl beat butter with an electric mixer on med. speed for 30 sec.
  • Add sugar, cocoa powder and baking powder & beat until combined.
  • Beat in eggs.
  • Beat in as much of the flour as you can.
  • Using a spoon, stir in any remaining flour, white baking bar and semisweet chocolate. Divide dough in half.

  • Toast the almonds on a baking sheet in the oven at 350F (180C) for about 15 minutes. Shake the pan once to make sure they get evenly browned.
  • Cream butter, sugar, and vanilla together in a large bowl with an electric mixer until light and fluffy. Add eggs and then cocoa. Beat until well combined.
  • Sift the flour, baking powder and salt together in another bowl, then gradually incorporate into the wet ingredients with a wooden spoon until a dough has formed.
