1 cup quinoa
1/2 cup finely chopped red onion
1/2 pound fresh hearts of palm (see cooks' note, below)
1/4 cup red-wine vinegar
1/3 cup olive oil
1/2 cup packed flat-leaf parsley leaves
Equipment: an adjustable-blade slicer

Steps:

  • Wash quinoa in 3 changes of cold water in a bowl, draining in a fine-mesh sieve. Cook quinoa in a medium pot of well-salted boiling water, uncovered, until almost tender, about 10 minutes. Drain in sieve, then set sieve over same pot above 1 inch of simmering water (water should not touch bottom of sieve). Cover quinoa with a folded kitchen towel (not terry cloth), then cover with a lid (don't worry if lid doesn't fit tightly) and steam until tender, fluffy, and dry, about 15 minutes. Let stand off heat, without lid but still covered with towel, 5 minutes.
  • Meanwhile, soak onion in a bowl of cold water 5 minutes, then drain well and pat very dry.
  • Trim ends of hearts of palm, then cut crosswise into very thin slices with slicer.
  • Whisk together vinegar, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Toss quinoa, onion, hearts of palm, and parsley with dressing.

¾ cup quinoa
1 ⅓ cups cubed seeded watermelon
1 cup sliced red bell pepper
1 cup sliced cucumber
¾ cup sliced red onion
1 small mango - peeled, seeded, and chopped
¼ cup drained pineapple tidbits, juice reserved
1 bunch cilantro leaves, chopped, a few leaves reserved for garnish
Dressing:
3 tablespoons white wine vinegar
3 tablespoons honey
2 tablespoons reserved pineapple juice from the can
2 tablespoons lime juice
3 cloves garlic, minced
¼ cup canola oil
salt and ground black pepper to taste
4 slices lime
1 jalapeno pepper, thinly sliced

Steps:

  • Bring water and quinoa to a boil in a saucepan; reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes. Refrigerate until cold, about 1 hour.
  • Stir cooled quinoa, watermelon, bell pepper, cucumber, red onion, mango, pineapple, and chopped cilantro leaves together in a large bowl.
  • Whisk wine vinegar, honey, pineapple juice, lime juice, and garlic together in a small bowl; drizzle in canola oil, whisking constantly. Pour dressing over quinoa mixture; toss gently to combine. 2 cups raw quinoa
2 quarts water
1/2 cup water
1/3 cup lime juice
2 fresh aji chilies, stems and seeds removed, chopped finely
2/3 cup olive oil
2 medium cucumbers, peeled, seeded, cut into 1/2-inch cubes
1 large tomatoes, seeds removed, cubed
8 green onions, white only, sliced
1/3 cup fresh Italian parsley, minced
1/3 cup mint, fresh minced
salt and black pepper
2 heads bibb lettuce, shredded
3 hard-boiled eggs, sliced thinly
2 fresh ears of corn, cooked, cut into 2-inch rounds
