Steps:
- Preheat the oven to 425 degrees F. Blend the tofu in a food processor until smooth. Add the confectioners' sugar, cream cheese, flour and vanilla and puree until combined.
- Stack the phyllo sheets on a flat surface and cover with a slightly damp kitchen towel. Cut a piece of parchment paper slightly longer than the phyllo. Lay 1 sheet phyllo on the parchment with a long side facing you (keep the remaining phyllo covered). Brush with 1 tablespoon butter and sprinkle with 1 tablespoon graham cracker crumbs. Top with another sheet of phyllo, then more butter and crumbs. Repeat with the remaining phyllo sheets, topping each with butter and crumbs. Reserve the remaining butter and crumbs for topping.
- Spoon the tofu mixture across the length of the phyllo, leaving a 1-inch border at the long edge closest to you and a 2-inch border at the short ends. Sprinkle the raspberries on top of the tofu mixture. Starting with the long edge, use the parchment to roll the phyllo tightly over the filling to make a log; turn seam-side down on the parchment. Brush with the remaining butter and sprinkle with the remaining crumbs.
- Transfer the parchment and strudel to a baking sheet. Bake until golden, about 18 minutes, rotating the baking sheet halfway through. Slide the strudel onto a cutting board and let cool completely, about 1 hour. Dust with confectioners' sugar.

Steps:
- Combine the raisins, apricots and rum. Set aside.
- Melt the two tablespoons of butter in a large heavy skillet just until foaming. Stir in the apple and let it cook over medium heat for about five minutes until softened. Add the brown sugar, lemon juice, zest, cinnamon, cloves, salt and raisin-apricot mixture. Mix well. Turn up the heat and allow the mixture to boil gently until thickened and slightly reduced - five to six minutes.
- Add the chopped Brazil nuts and stir to blend. Set aside.
- Preheat the oven to 400 degrees. Butter a cookie sheet or jelly-roll pan.
- On a clean work space, spread a large towel, place one sheet of phyllo on it and brush a 1-inch strip along the top with melted butter. Place the lower edge of a second sheet of phyllo along the buttered edge of the first sheet, overlapping about 3/4-inch. Brush both sheets lightly with butter and sprinkle about two tablespoons of bread crumbs evenly over this. Repeat with the third and fourth, and again with the fifth and sixth, sheets of phyllo. Place the seventh phyllo sheet on top, brush the edge with butter and place the eighth sheet on top, but do not brush all over with butter.
- Transfer the nut mixture to lower edge of phyllo, forming it into an even cylinder, and leaving a 1 1/2-inch border on each side. Holding the towel by the lower edge, flip it, causing the phyllo to roll over on itself. Turn in the phyllo edges and continue to roll.
- Carefully roll the strudel onto a cookie sheet, seam side down. Brush the top and ends with butter and bake in the middle of the oven for 15 minutes, or until crisp and golden.
- Remove from the oven and let stand at least 10 minutes before serving. Dust with confectioners' sugar and garnish with the three whole Brazil nuts. To serve, use a serrated knife to cut 1-inch slices and garnish with unsweetened whipped cream.

Tips:
- Use fresh raspberries: Fresh raspberries have the best flavor and texture for strudels. If you can't find fresh raspberries, you can use frozen raspberries that have been thawed and drained.
- Don't overfill the strudel: Overfilling the strudel will make it difficult to roll and seal. It will also make the strudel more likely to burst open during baking.
- Roll the strudel tightly: Rolling the strudel tightly will help to keep the filling from leaking out. It will also help to create a more even bake.
- Bake the strudel until it is golden brown: Baking the strudel until it is golden brown will help to ensure that it is cooked through. It will also give the strudel a nice crispy crust.
- Let the strudel cool before slicing: Letting the strudel cool before slicing will help to prevent the filling from oozing out. It will also make the strudel easier to slice.
- Serve the strudel warm or at room temperature: Raspberry nut strudel is best served warm or at room temperature. You can also serve it with a dollop of whipped cream or ice cream.
Conclusion:
Raspberry nut strudel is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up fresh raspberries, and it can be made ahead of time and reheated when you are ready to serve.
