2 cups water
½ cup white rice
2 ⅔ cups whole milk
3 eggs, slightly beaten
½ cup white sugar
1 (4-serving size) package cook-and-serve vanilla pudding mix
1 tablespoon butter
½ teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8-inch square baking dish.

4 eggs
1 cup sugar
1/2 teaspoon nutmeg
1 cup cooked rice (do not use minute rice)
1 (12 fluid ounce) can Carnation Evaporated Milk
1/2-3/4 cup low-fat milk
2 -3 tablespoons butter, softened
cinnamon

Steps:

  • In a medium sized bowl, beat 4 eggs lightly, add 1 cup sugar and beat a little.
  • Add 1/2 teaspoon nutmeg.
  • Add 1 cup cooked rice to the mixture.
  • Add 1 can Carnation evaporated milk and stir.
  • Pour into a 2 quart dish and add the low-fat milk.
  • Sprinkle cinnamon on the top.
  • Add butter (small"clicks" on top- each"click" probably 1/2 tablespoon).
  • Bake in a 325 degree oven for 1 1/2 hours or until the pudding's top moves a little in the center if you push it gently.

I usually use leftovers.

3 eggs, beaten
1/2 cup sugar
1/4 teaspoon salt
3 1/2 cups milk
1/2 cup raisins
1/2 teaspoon lemon juice
1 tablespoon cinnamon
1 teaspoon nutmeg
1 tablespoon butter

Steps:

  • Combine rice, eggs, sugar, salt, milk, raisins, and lemon.
  • Spray a baking dish with cooking spray and pour in the rice mixture. Tap the dish on the counter to settle it.
  • Sprinkle the top with the cinnamon and nutmeg and drop small pieces of the butter evenly across the pudding.
  • Bake for 1 hour and 350°F May be served warm or cold.

8 whole green cardamom pods, lightly crushed to remove seeds, discarding pods
½ gallon whole milk
1 cup uncooked white rice
1 cup unsalted butter
1 cup sugar
3 tablespoons unsalted butter, or amount desired
1 teaspoon ground cinnamon

Steps:

  • Using a rolling pin, crush the cardamom seeds until very fine. Place the cardamom, milk, rice, and butter into a deep, heavy pan. While slowly stirring the milk mixture, cook over medium heat for 90 minutes. Lower the heat if necessary to prevent the milk from boiling or overheating. Stir in the sugar, and continue cooking until the mixture thickens, about 15 minutes more.
  • Pour the rice mixture into a serving bowl. Place 3 tablespoons butter on top, and allow to melt. Dust with cinnamon. Serve warm or cold.

Dash salt
4 cups milk
2/3 cup sugar, divided
2 eggs
