1 teaspoon vanilla extract, or more to taste
1 cup semisweet chocolate chunks
1 cup honey graham cereal (such as Golden Grahams®)
½ (10.5 ounce) package miniature marshmallows

Steps:

These s'mores cookies are less messy than the original, as well as being portable and great to have with you whenever you go on a road trip. This recipe came from one of my old pastry chefs--and I loved it so much. By marrying two American classics--the chocolate chip cookie and the s'more--this just might achieve cookie nirvana.

1 1/4 cups (5 1/2 ounces) all-purpose flour
1 cup (3 3/4 ounces) graham cracker crumbs
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
12 tablespoons (6 ounces) unsalted butter, softened
1/2 cup (3 1/2 ounces) granulated sugar
1/2 cup (3 ounces) packed light brown sugar
1 large egg, at room temperature
2 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1 3/4 cups (10 ounces) semisweet chocolate chips
3/4 cup mini marshmallows

Steps:

  • Preheat the oven to 350 degrees F; position the rack in the middle of the oven. Line three rimmed baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt until thoroughly combined. Set aside.

1 ½ cups all-purpose flour
1 cup graham cracker crumbs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
1 cup unsalted butter, softened
1 cup brown sugar
½ cup white sugar
¼ cup milk
2 large eggs
1 tablespoon vanilla extract
½ (10 ounce) package marshmallows, or to taste
2 (8 ounce) packages milk chocolate candy kisses

Steps:

  • Mix oats, flour, graham cracker crumbs, baking soda, baking powder, cinnamon, and salt together in a bowl.
