Shav, also known as Sorrel Soup can be either served hot or cold, but I prefer it as a cold soup. After it is chilled in the refrigerator, I add into each individual bowls a chopped up hard boiled egg and a dab of sour cream. Sorrel leaves are expensive, so I use spinach instead and you can hardly taste a big difference (provided sour salt is used). This soup can be found in Jewish cuisines and known in Russian, Polish and other eastern European countries. Served this tasty soup with an old style hard crusted pumpernickel bread and enjoy!

8 ounces Baby Spinach (see notes) or 8 ounces sorrel (see notes)
8 cups water
3 teaspoons citric acid
1 small onion (chopped up into small pieces)
4 hard-boiled eggs
6 -8 tablespoons sour cream
8 slices dark crusted pumpernickel bread

  • Wash thoroughly the spinach in cold water, then chop finely.
  • Add 8 cups of water to a pot and bring to a boil.

2 tablespoons unsalted butter
1 spring onion, sliced and washed
2 young leeks, sliced and washed

3/4 pound watercress (3 to 4 bunches)
1/4 pound spring nettles, blanched if stinging variety

  • In a large saucepan, warm the olive oil and butter over medium heat until the butter is foamy. Add the onion, leeks, garlic, and salt, and stir to coat. 1 tablespoon butter
1 cup coarsely chopped leeks
1/2 pound potatoes, peeled and cut into one-inch cubes, about one cup
4 cups rich fresh or canned chicken broth

1/2 cup heavy cream

Steps:

  • Pick over the sorrel. Remove and discard any tough stems and blemished leaves. Rinse and pat dry. Pack the leaves closely and cut them crosswise into thin strips. Set aside.

3 leeks, both green & white sliced thinly
5 large garlic cloves, crushed
12 cups fresh sorrel leaves (rinsed, trimmed, & tightly packed)
4 cups chicken stock
1 medium potato, peeled & cut into cubes
1 cup Italian parsley, loosely packed
1 tablespoon lemon juice (or I use 8 lemon verbena leaves)
2 teaspoons dried tarragon (or I use 1 teaspoon fresh tarragon)
1 teaspoon ground mace
1 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • In a large Dutch oven, melt butter. Add leeks and garlic and saute until soft.

1 large head cauliflower, stem discarded, florets chopped
1 medium potato, peeled and chopped
1/2 onion, chopped
1 tablespoon butter
1 tablespoon olive oil
4 cups light chicken stock
2 cups whole milk
1/2 cup heavy cream
6 large sorrel leaves, stems trimmed, then shredded
2 tablespoons caviar (optional)
Sea salt and freshly ground black pepper

Steps:

  • Place the cauliflower florets, potato, and onion in a saucepan with the butter and oil. Heat gently and, when the contents start to sizzle, cover with a lid and sweat everything over a low heat for about 10 minutes. The vegetables should not be at all colored.
  • Add the stock and bring to a boil, then pour in the milk and return gently to a boil. (This way, there will be no scum forming in the milk.) Season to taste, then simmer, uncovered, for 10-15 minutes when the vegetables should be soft.
  • Pour in half the cream, then puree in a food processor or blender, or blend in the pan with an immersion blender. Pass the puree through a sieve into a clean pan, rubbing with the back of a ladle.
  • Stir in the rest of the cream. Taste for seasoning and bring the soup to a boil. Ladle into soup plates, top with sorrel shreds, and add a spoonful of caviar to each. Serve.

2 tablespoons butter
2 tablespoons flour
1 quart chicken broth
2 egg yolks
1/2 cup heavy cream

  • Remove stems from Sorrel leaves, wash in salad spinner and set aside, reserving 2 leaves for garnish.
  • Sauté finely chopped onion in butter until translucent.

3 egg yolks
1/2 cup heavy cream
1/8 teaspoon freshly grated nutmeg

2 fistfuls sorrel leaves, about 3 cups, washed and spun dry
2 tbsp butter
1/2 large sweet onion, chopped
5 to 6 small fingerling or new potatoes, cut into chunks
2 cups chicken or vegetable broth
1 egg, lightly beaten
Salt and pepper, to taste

Steps:

  • Stack the sorrel leaves and cut into ribbons. Set aside. In a large, heavy saucepan with a tight-fitting lid, heat the butter over medium heat. When the butter has melted, add the onion. Cook, stirring occasionally, until the onion is well-browned, about 20 minutes. Add the sorrel, potatoes and broth. If the broth does not cover the contents, add a little water. Bring to a boil, reduce heat to low, cover and cook until potatoes are tender, about 15 minutes. When the potatoes are done, transfer half of the mixture to a blender or food processor (blenders give smoother results). Process carefully until the mixture is puréed and smooth. Repeat with remaining soup. Return the soup to the saucepan over low heat. Temper the egg by whisking it with about one-quarter cup of soup, then pour the egg mixture into the pan. Cook, whisking constantly, until the soup thickens, about 5 minutes. Do not boil. If serving hot, garnish each portion with sour cream or yogurt.
