Tips:

  • Using fresh corn kernels will give your dip a sweeter, more flavorful taste. If you don't have fresh corn, you can substitute frozen or canned corn.
  • Roasting the poblano peppers before adding them to the dip will give them a slightly smoky flavor. You can roast the peppers in the oven or on a grill.
  • Be sure to dice the peppers and onions very finely. This will help them to blend in with the other ingredients and create a smooth dip.
  • If you like a spicy dip, you can add more diced jalapeño peppers or a pinch of cayenne pepper.
  • Serve the dip with tortilla chips, crackers, or vegetable crudités.

Conclusion:

This Southwest corn and green chili dip is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to use up leftover corn and peppers. The dip is creamy and flavorful, with a slight kick from the green chiles. It's sure to be a hit with everyone who tries it!
