2 Tablespoons tomato paste
1 (10 ounce) can Rotel diced tomatoes and green chiles (drained)
1 teaspoon cumin
1/2 teaspoon chili powder
1 teaspoon minced garlic
salt and pepper, to taste

Steps:

1 small red bell pepper, diced

½ cup vegetable broth

½ teaspoon dried oregano

2 tablespoons water
4 tablespoons olive oil
½ yellow onion, finely chopped
2 tablespoons granulated garlic
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon ground white pepper
½ cup chunky salsa

Steps:

  • Put cauliflower rice in a microwaveable bowl. Add about 2 tablespoons water. Cover with plastic wrap and microwave on high until tender, about 5 minutes. Let cool until safe to handle.

1/2 cup tomato juice
1/4 teaspoon ground cumin
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
