3 tablespoons plus 1 cup sugar
1 3/4 teaspoons ground cinnamon, divided
2 tablespoons cornstarch
2 teaspoons (packed) finely grated orange peel
3/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon salt
1/2 vanilla bean, split lengthwise
2 1/2 pounds plums, halved, pitted, each half cut into 4 wedges
2 tablespoons whipping cream

Steps:

  • Roll out 1 pie crust disk on floured surface to 13 1/2-inch round. Transfer to 9-inch glass pie dish. Trim overhang to 1 inch. Refrigerate crust while preparing filling.
  • Position rack in center of oven; preheat to 375°F. Place foil-lined baking sheet in bottom of oven to catch any spills. Mix 3 tablespoons sugar and 1/4 teaspoon cinnamon in small bowl; set aside. 2 (825 g) cans dark plums in light syrup
2 cups dried apricots
1 cinnamon stick
3 cloves
1/2 teaspoon mixed spice
1/2 teaspoon ground ginger
2 sheets shortcrust pastry
1 egg, lightly beaten
1 tablespoon sugar (see note)
1/2 cup plain yogurt
1/2 cup sour cream
1 tablespoon cinnamon
1/4 teaspoon ground ginger
icing sugar, for dusting

Steps:

  • Preheat oven to 200 Celsius (400 F). Grease 26 cm (10.5 inch) pie dish or deep 1.25 litre (5 cup) rectangle dish.
  • Drain plums and reserve 1 cup of syrup.
  • Halve plums, discard stones, place plums in prepared dish.
  • Combine reserve syrup, apricots, cinnamon, cloves, mixed spice and ginger in medium saucepan.
  • Simmer uncovered until liquid is reduced to ½ cup.
