Steps:

  • Heat olive oil in a large saucepan over medium heat; cook and stir onion and garlic until onion is translucent, about 5 minutes.

1 tablespoon olive oil
1 chile pepper, chopped
1 cup red lentils
1 (14.5 ounce) can peeled and diced tomatoes
1 cup water

¼ cup sour cream, for topping
2 sprigs fresh basil leaves for garnish

Steps:

  • Heat the olive oil in a large saucepan or Dutch oven. Lightly brown the onions in the oil. Add the tomatoes, chili pepper, lentils, cumin and basil to the pan along with the water. Bring to a boil, then reduce heat to medium-low and simmer for about 20 minutes, or until the lentils are tender.

1 1 1/2-inch piece ginger, peeled and grated

1/4 teaspoon ground turmeric
Kosher salt
1/4 cup roughly chopped fresh cilantro, plus more for topping
1/4 cup Greek yogurt
Naan or other flatbread, for serving

Steps:

  • Combine the lentils and 7 cups warm water in a pot, cover and bring to a boil. Add the chile pepper, tomato, ginger, garlic, turmeric and 2 teaspoons salt. Partially cover and simmer over medium-low heat, stirring frequently, until thickened, 18 to 20 minutes. Stir in the cilantro. Thin the soup with water, if desired, and season with salt.
  • Mix the yogurt with 2 teaspoons water and a pinch of salt in a small bowl. Ladle the soup into bowls and top with the yogurt and more cilantro. Serve with naan.

Steps:

1 red bell pepper
½ green bell pepper
3 cups water
1 cup brown lentils
1 tablespoon olive oil
1 carrot, sliced
1 onion, chopped
1 broccoli floret, chopped
2 cups vegetable broth
1 tablespoon crushed red pepper flakes
1 tablespoon ground ginger
1 tablespoon ground black pepper
1 teaspoon dried thyme leaves
1 teaspoon dried rubbed sage

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Cut the peppers in half from top to bottom; remove the stem, seeds, and ribs, then place the peppers cut-side-down onto the prepared baking sheet.
  • Bake in the preheated oven until limp, 30 to 40 minutes. Turn the peppers over halfway through cooking. Once ready, place the peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove the skins and discard. Chop the peppers
  • Meanwhile, bring the water and lentils to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the lentils are tender, about 30 minutes. Drain, rinse, and set aside.
  • Heat the olive oil in a large saucepan over medium heat. Stir in the carrot, onion, and broccoli; cook and stir until the onion has softened, about 5 minutes. Pour in some of the vegetable broth, cover, and steam the vegetables until tender. Pour in the remaining vegetable broth and chopped peppers; season with the red pepper flakes, ginger, black pepper, thyme, and sage. Simmer until the flavors come together and the vegetables are very tender, about 20 to 30 minutes. Add water if needed to maintain your desired consistency. Stir in the cooked lentils until hot.
  • If desired, pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.

This is a modification of a soup recipe I learned in a vegan cooking class. I've tinkered with it quite a bit over the years, and it's quite different from the original now. It can be made as a curry or a soup, depending on the amount of liquid used. When I make it as a curry, I often double this recipe and serve it over recipe #284073. Use onion if you can't find fennel, or to ramp up the spiciness. To prepare fennel bulbs, cut off stalks and strip outer layer off bulb before chopping. Freezes well.

  • In a large frying pan or skillet, heat the oil.
  • Add hing, seed mixture and hot red peppers. Sauté until the seeds begin to pop. This will only take a few seconds!
  • Add the fennel, garlic and jalapeño, sauté until halfway to soft. Add tomatoes, continue sautéing until fennel is soft and tomatoes are hot and beginning to lose their shape. Remove from heat.
  • Add fennel/tomato mixture to lentil mixture in saucepan. Stir well. For soup, add the extra 2/3 cup water. Cover and cook on low heat 15 minutes. Remove hot red peppers before serving.

1 cup red lentil, and water to cover (will be drained off)
1 -2 tablespoon olive oil
1 medium onion, chopped small
2 garlic cloves, crushed
1 teaspoon fresh ginger, grated
1 teaspoon turmeric
1/2-1 teaspoon ground cumin
1/8-1/4 teaspoon chili powder
1/2 cup zucchini, diced small
1/2 cup carrot, diced small
5 cups vegetable stock
salt and pepper, to taste
1 -2 ounce linguine, broken into 1-inch pieces
2 -4 tablespoons cilantro, chopped (optional)
cream, sour cream (optional) or neufchatel cheese (optional)

Steps:

  • Wash and pick over lentils. Cover with water and leave to soak for 15 minutes.
  • While lentils are soaking, prepare other ingredients for use.
  • When everything is ready, drain lentils and set aside.
  • Heat oil in a heavy saucepan. Sauté onion, garlic and ginger until onion is translucent.
  • Stir in turmeric, cumin and chili powder, and sauté for about 1 minute.
  • Add lentils, zucchini, carrot, vegetable stock, salt and pepper (if needed). Bring to a boil, then reduce heat and simmer for 20-30 minutes (until vegetables are almost tender). Spoon off scum as needed.
  • Add linguine pieces and simmer another 10-15 minutes (until pasta is al dente). I used only 1 ounce of linguine, but you could use more to add body to the soup.
  • To serve, ladle into bowls and garnish with cilantro and a dollop of cream, sour cream or Neufchatel cheese.

3 large tomatoes, coarsely chopped
3 cloves garlic, finely minced
Kernels cut from 2 ears fresh corn, or 1 cup frozen corn

Tempering Oil
2 teaspoons ghee
2 teaspoons black mustard seeds
1 dried red chile, broken into bits
1/4 cup chopped fresh cilantro leaves

Steps:

  • Wash the lentils thoroughly, being sure to remove any small stones or dirt. Place them, along with the water, in the slow cooker insert.
  • In an electric coffee mill or a mortar and pestle, grind the cumin seeds, coriander seeds, and peppercorns to a coarse powder.
  • In a bowl, combine the ground spices, turmeric, tamarind concentrate, tomatoes, and garlic; add to the lentils.
  • Cook, covered, on low for 5 to 6 hours, or until the lentils are quite tender and the flavors have melded.
  • Add the corn and salt to taste just before serving so that the corn retains its fresh flavor and texture.
  • To make the tempering oil, heat the ghee in a frying pan, then add the mustard seeds and broken chile and sauté until the seeds begin to pop. Quickly remove from the heat and drizzle a tiny bit over each bowl of soup.
  • Sprinkle with the fresh cilantro and serve.

2 tsp. + 2 tsp. olive oil (or more, depending on your pan)
1 onion, chopped
1 cup finely diced celery
1 T minced garlic (or less, but I like a lot of garlic in this)
1/2 tsp. hot red pepper flakes (more or less to taste)
1/2 tsp. dried thyme
1 tsp. dried Greek or Turkish oregano (or regular oregano will work, but don't use Mexican oregano)
1 tsp. ground fennel seed (optional, but this really adds to the flavor)
5 links (19.5 oz.) hot turkey Italian Sausage
8 cups chicken stock
3 cans petite dice tomatoes with juice (14.5 oz. can)
1 1/2 cups dried brown lentils or small beans
2 dried bay leaves
salt and fresh ground black pepper to taste
chopped fresh parsley for garnish (optional)

Steps:

  • Heat 2 tsp. olive oil, add chopped onion and celery and saute until it's just starting to brown, about 5 minutes. Add minced garlic and saute 1 minute more, then add red pepper flakes, dried thyme, dried oregano, and ground fennel seed and saute 1 minute more. Cook beans / lentils separately with combo of water and chicken broth. When tender add onions. Add the rest of the chicken stock, diced tomatoes and juice, and bay leaves to the soup pot. Heat soup until it's barely boiling, then reduce heat. Add 2 tsp. more olive oil to pan that had onions, squeeze turkey sausage out of casings and saute until the sausage is nicely browned, breaking it apart with a metal turner as it cooks. (You may need a bit more olive oil if you don't use a non-stick pan.) Add browned sausage to soup pot, then deglaze the pan with 2 cups of the chicken stock, scraping the browned sausage bits off the bottom of the pan, and add that to soup pot. When lentils are soft, remove about 1/3 of soup mixture and use an immersion blender, food processor, or blender to puree the mixture until it's very smooth, about 2 minutes. (Be very careful with the hot soup if you use a food processor or blender.) Taste soup, season to taste with salt and fresh ground black pepper, and serve hot, garnished with chopped parsley if desired. This soup freezes well, so you might want to make a double batch and freeze some for lunches to take to work.

  • with an immersion blender puree soup until it's smooth.
  • (this can also be done in a blender, in batches).
  • stir in coconut milk and remaining ingredients.
  • serve.

I never met a lentil I didn't like, and any kind will work (yellow, red, green,) in this hearty and filling vegetarian main-course soup. I created it when I found an almost-empty bottle of couscous spices, bought in France a couple of years ago. The product is called "ras el hanout" which I am told translates roughly as "top of the spices," and is a blend of (if my French translation is correct) black pepper, garlic, cinnamon, ginger, mustard, clove, nutmeg, and red pepper. It is available online at http://www.zamourispices.com/raselhanout.html. Complex and unusual, and adds great zip. This is a delicious meal with a simple salad and some crusty artisan bread. It tastes even better 2 days later, and freezes well.

1 medium yellow onion, chopped fine
1 small red bell pepper, chopped fine

1/2 cup lentils either green or brown
2 tbsp. olive oil
2 oz. chorizo, chopped
1 red onion
3 cloves of garlic
3 tsp, cumin
2 tsp. ground coriander

1/2 tsp crushed dried chili pepper or more if you like it hot
4 tomatoes, peeled, seeded and chopped
1 14 oz can chickpeas, rinsed and drained
1 tbsp. tomato paste
5 cups chicken stock
Sea salt and freshly ground pepper to taste
Juice of about 1/2 lemon or to taste

Steps:

  • Put the lentils in a large saucepan, pour in enough boiling water to cover them generously, and simmer for about 20 minutes, until just tender. Do not over cook. Drain well. Sweat the onions in the olive oil until translucent; add the chorizo, and garlic, stir for about 5 minutes. Add the cumin, coriander, cinnamon and chili, stir to let the spices heat up in the pan, just long enough to release their aroma. Add the tomatoes, chickpeas, tomato paste and the stock. Bring to a boil, reduce the heat, cover and simmer for 15 minutes. Add salt and pepper and lemon juice to taste. This recipe can also be made from smoked linguica as well.
