Yield Serves 4

Number Of Ingredients 7

4 pounds butternut squash (about 2 medium)
1 pound beets (about 2 large)
1 medium onion
2 teaspoons vegetable oil
4 large garlic cloves
four 5-ounce skinless halibut fillets
Accompaniment: spicy cilantro sauce

Steps:

  • Preheat oven to 450°F. Halve squash lengthwise and discard seeds. Peel squash and cut enough 3/4-inch cubes to measure 6 cups. Trim and peel beets. Cut beets and onion into 3/4-inch cubes. • Roast vegetables in middle of oven 25 minutes. Thinly slice garlic and scatter over vegetables. Roast vegetables 8 minutes more, or until barely tender. Season halibut with salt and pepper and arrange on top of vegetables. Roast halibut in middle of oven until just cooked through, about 8 minutes.
  • Serve halibut over vegetables with sauce.

Tips for Roasting Vegetables:

  • Choose the right vegetables: Vegetables that are firm and have a low moisture content, such as root vegetables, cruciferous vegetables, and squash, are best for roasting.
  • Cut the vegetables into uniform pieces: This will help them cook evenly.
  • Toss the vegetables with olive oil, salt, and pepper: This will help them brown and develop flavor.
  • Roast the vegetables at a high temperature: This will help them caramelize and get crispy.
  • Don't overcrowd the pan: This will prevent the vegetables from roasting evenly.
  • Roast the vegetables until they are tender and slightly browned: The roasting time will vary depending on the type of vegetable.
  • Season the vegetables to taste: You can add additional salt, pepper, herbs, or spices after roasting.

Conclusion:

Roasted vegetables are a delicious and healthy side dish or main course. They are easy to make and can be customized to your liking. With a little planning, you can create a variety of roasted vegetable dishes that will please everyone at your table. So next time you're looking for a healthy and flavorful side dish, give roasted vegetables a try. You won't be disappointed!
