STACIE'S SOUR CREAM BANANA BREAD

Stacie's Sour Cream Banana Bread image

I used to frequent a cross stitch message board, and Stacie shared her banana bread recipe. I have made this numerous times - always a winner, and always eaten quickly!

Categories     Quick Breads

Time 1h10m

Yield 2 loaves

Number Of Ingredients 11

1 1/2 cups white sugar
3/4 cup shortening
2 eggs
1 teaspoon vanilla
1 cup sour cream
1/2 cup chopped nuts (I sometimes use chocolate chips) (optional)
2 large bananas, mashed
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups flour

Steps:

  • Cream sugar and shortening.
  • Add eggs and vanilla; blend well.
  • Add mashed bananas.
  • Sift flour with dry ingredients.
  • Add flour to wet ingredients, alternating with sour cream.
  • Add nuts.
  • Place in 2 pans; pans should be"greased" and dusted with flour.
  • Bake at 375F fir 1 hour.
  • Remove from pans; let cool.
  • Store in tin foil; they are very moist!
  • Can easily be halved (I have done this, and it still tastes great) but be warned that you NEED two loaves!

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with yellow skin that has brown spots.
  • Don't overmix the batter: Overmixing will make the banana bread tough and dense. Mix just until the ingredients are combined.
  • Grease and flour the loaf pan: This will prevent the banana bread from sticking to the pan. You can also use a parchment paper liner.
  • Bake the banana bread until a toothpick inserted into the center comes out clean: This usually takes about 50-60 minutes. If you want a moister banana bread for kids party, you can cover the loaf pan with foil after 30 minutes of baking.
  • Let the banana bread cool completely before slicing: This will help the bread to set and make it easier to slice. You can speed up the cooling process by placing the loaf pan in the refrigerator or freezer for a few minutes.

Conclusion:

Stacie's Sour Cream Banana Bread is a delicious and moist banana bread recipe. It's easy to make and perfect for breakfast, brunch, or a snack. With its sweet and tangy flavor, this banana bread is sure to be a hit with everyone who tries it!
