The rhubarb shoots emerging in my garden prompted me to post this recipe from Christine Cushing. I haven't tried it yet - but very soon! Christine suggests sprinkling crushed amaretti cookies between the layers.

3/4 cup rhubarb, cut into 1 inch pieces
1 3/4 cups strawberries, quartered
1/2 lemon, zest of
1/2 cup granulated sugar
1 1/2 tablespoons cornstarch
1 cinnamon stick
1 cup heavy cream (35%)
1 -2 tablespoon icing sugar
1 tablespoon Grand Marnier or 1 tablespoon other orange-flavored liqueur (optional)
1/2 cup creme fraiche

Steps:

  • Strawberry Rhubarb Compote: In a medium saucepan over medium low heat add rhubarb, strawberries, cinnamon stick, sugar, cornstarch and lemon zest; stir the mixture occasionally so not to burn.
  • Cook until rhubarb is soft and mixture thickens, about 8 to 10 minutes; cool completely& remove cinnamon stick.
  • Cream Layer: In the bowl of a stand mixer fitted with a whisk attachment (or alternatively with an electric hand mixer), whip cream until soft peaks start to form.
  • Add icing sugar and increase speed to high; continue to whip cream into firm peaks.
  • Fold crème fraiche and Grand Marnier into whipped cream.
  • Assembly: Divide 1/3 of the cream layer equally into 6 parfait glasses; divide half the strawberry rhubarb compote equally on top of the layers of the cream layer.
  • Divide another 1/3 of the cream on top of the layers of the strawberry rhubarb compote; divide remaining half of strawberry rhubarb compote equally on top of the layers of cream.
  • Divide the remaining 1/3 the cream equally on top of the strawberry compote mixture.
  • Garnish each parfait with a whole strawberry, sprig of lemon balm and cookie (optional).

SHANNON'S STRAWBERRY PINEAPPLE PARFAIT

This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

1 1/3 cups quartered strawberries
1 tablespoon sugar
1 teaspoon fresh lemon juice
3/4 teaspoon unflavored gelatin
1 1/2 tablespoons water
1/2 cup chilled heavy cream
3 butter cookies, crushed

Steps:

  • Dice 1C Strawberries and mix with sugar and lemon. Cut remaining 1/3C into a large dice and set aside.
  • Sprinkle gelatin evenly over water in a very small saucepan and let stand for 1 minute to soften. Then warm over low heat stirring until gelatin is dissolved. Stir gelatin into mashed strawberries.
  • Set bowl in a a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture. About 5 minutes.
  • Beat cream in another bowl with a whisk until it just holds stiff peaks. Fold about a 1/2C of cream into gelatin mixture.
  • In a decorative glass or dish, begin layering whipped cream, mousse, cookie crumbs and whipped cream until glass is full.

STRAWBERRY-SHORTCAKE PARFAIT POPS

Cooking spray
1 1/2 cups Special K Red Berries cereal
1/2 cup unsweetened shredded coconut
3/4 cup vanilla frozen yogurt, slightly softened
3/4 cup strawberry sorbet, slightly softened

Steps:

  • Spray the insides of six 3-ounce paper cups with cooking spray. Pulse the cereal and coconut in a food processor until coarsely ground.
  • Put about 1 tablespoon cereal mixture in the bottom of each cup and top with 1 tablespoon frozen yogurt. Add 2 tablespoons sorbet and press into the cup, then pack in another tablespoon of frozen yogurt and sprinkle with more cereal mixture. Insert a wooden stick into the center of each pop and freeze until hard, at least 4 hours.
  • Before serving, snip the paper cup and peel it off.

1 3-oz. package strawberry gelatin
1¼ cups hot water
1 pint vanilla or strawberry ice cream
1 pint strawberries, 1½ cups sliced
1 8 or 9-inch graham cracker crust
whipped cream
CRUMB CRUST
1½ cups fine graham cracker crumbs (18 crackers)
¼ cup sugar
½ cup melted butter

Steps:

  • 1. Dissolve gelatin in hot water; use stainless steel bowl for it will cool quicker. Wash and stem strawberries, pat dry and slice. Cut ice cream into 2-inch chunks (4 or 5 scoops should work); add to gelatin and stir until ice cream melts. Chill until partially set. Stir in sliced berries and turn into piecrust; chill. Top with whipped cream if desired. Makes 6 to 8 servings.
  • 2. Mix crumbs and sugar; add butter and mix well. Press into 9-inch pie plate. Bake in 375° oven for about 8 minutes; cool before filling.

9 ounces solid Godiva ivory chocolate bars, coarsely chopped (6 bars 1.5 oz each)
1 1/2 cups heavy cream
1/2 cup mascarpone cheese
1 teaspoon vanilla extract
1 (12 ounce) bag frozen unsweetened strawberries
1/2 cup granulated sugar
1 tablespoon orange-flavored liqueur or 1 tablespoon strawberry liqueur
1 pint strawberry
1 teaspoon granulated sugar
1 tablespoon orange-flavored liqueur or 1 tablespoon strawberry liqueur
4 slices poundcake, lightly toasted (thin slices)

Steps:

  • MAKE THE WHITE CHOCOLATE CREAM:.
  • Place solid ivory in medium bowl.
  • In small saucepan, bring cream to gentle boil.
  • Remove from heat.
  • Pour hot cream mixture over solid ivory.
  • Let mixture stand for 30 seconds to melt.
  • Gently whisk until smooth.
  • Whisk in mascarpone cheese and vanilla.
  • Cover mixture with plastic wrap and refrigerate for at least 4 hours.
  • MAKE THE STRAWBERRY COULIS:.
  • Combine frozen strawberries and sugar in medium saucepan and cook over medium heat, stirring constantly with wooden spoon, until sugar is completely dissolved and berries are soft.
  • Do not let mixture boil.
  • Strain strawberry mixture through fine-meshed sieve into bowl.
  • Stir in Grand Marnier, orange-flavored liqueur.
  • Cover and refrigerate.
  • PREPARE THE STRAWBERRIES:.
  • Reserve 6 small, whole berries for garnish.
  • Hull, wash and cut berries into quarters into medium bowl.
  • Sprinkle with sugar and Grand Marnier or Framboise and stir (see others above in ingredients)
  • Let macerate in refrigerator until ready to assemble parfaits.
  • ASSEMBLE THE PARFAITS:.
  • Cut pound cake slices into 1/4-inch cubes.
  • Divide cubes among six parfait glasses.
  • Pour 2 tablespoons strawberry coulis over cake cubes in each parfait glass.
  • With teaspoon, toss cubes in coulis.
  • Remove white chocolate mascarpone cream from refrigerator.
  • Whisk to soft peaks.
  • Fill pastry bag with large star tip (such as Ateco #8) with whipped white chocolate mascarpone cream and pipe some into each parfait glass.(You can use a plastic bag & cut a slit in one of the corners as a pastry bag.).
  • Top with berries and pipe large rosette of white chocolate mascarpone cream on top of each parfait.
  • Garnish with whole strawberries and refrigerate until ready to serve.

3/4 cup white chocolate, finely chopped

1 tablespoon raw sugar

Steps:

  • For the vanilla-white chocolate whipped cream: Heat the cream and vanilla in a pot, stirring, until it starts to steam (do not let it boil). Discard the vanilla bean. Place the white chocolate in a bowl, and pour the cream on top, mixing until melted. Refrigerate covered until completely cool, about 1 hour. Whip until soft peaks form using a whisk or electric hand mixer.
  • Mix the strawberries with the sugar in a bowl. Spoon some whipped cream into the bottom of a glass, and then top with a layer of strawberries and a layer of cake. Repeat until the glass is full. Garnish with a dollop of whipped cream and more strawberry slices.

3 butter cookies, coarsely crushed (1/4 cup)

Steps:

  • Mash 1 cup quartered strawberries with sugar and lemon juice in a bowl using a fork. Cut remaining strawberries into 1/4-inch dice and reserve.
  • Sprinkle gelatin evenly over water in a very small saucepan and let stand 1 minute to soften, then warm over low heat, stirring until gelatin is dissolved. Stir gelatin mixture into mashed strawberries.
  • Set bowl in a larger bowl of ice and cold water and stir frequently until a spoonful of gelatin mixture holds its shape briefly before dissolving back into mixture, about 5 minutes.

1/2 cup caster sugar (100g)
1/4 cup water
6 medium egg yolks
350 g strawberries, plus
100 g extra strawberries
2 vanilla pod
300 ml double cream

Steps:

  • Heat sugar and water in a small saucepan over a low heat until sugar has completely dissolved.
  • Bring to a boil, then boil rapidly for 2 minutes.
  • Meanwhile, whisk egg yolks in a bowl with a hand-held electric mixer for 3 minutes or until pale and mousse-like.
  • Slowly add boiling syrup to yolks, whisking constantly, and continue to whisk for 5 minutes or until mixture is very thick and about 3 times its original volume.
  • Crush strawberries with a fork to a coarse puree in a bowl.
  • Slit open vanilla pods and scrape seeds into another bowl.
  • Add cream and whisk until it forms soft peaks, then gently fold into egg mixture, followed by crushed strawberries.
  • Divide mixture between 8 x ¾-cup (185ml) glass serving dishes or ramekins, cover well with plastic wrap and freeze for at least 4 hours.
  • To serve, remove parfaits from freezer and leave to soften slightly at room temperature.
  • Pile a few strawberries on top and serve.
