SUPER EASY BAKED CHICKEN PARMESAN FOR TWO

Super Easy Baked Chicken Parmesan for Two image

This recipe is based off of a Cooking Light recipe, but it is not pan fried at all. You could easily double this recipe, but I cook for two, so this is perfect for us. I serve this with veggies and crescent rolls.

Time 30m

Yield 2 serving(s)

Number Of Ingredients 7

1 tablespoon parmesan cheese, grated (the powdery kind)
2 tablespoons Italian seasoned breadcrumbs
1/8 teaspoon salt
1 large egg, lightly beaten
2 (5 ounce) boneless skinless chicken breasts, pounded to 1/4 inches
3/4 cup spaghetti sauce (tomato-basil is good)
1/2 cup mozzarella cheese, grated

Steps:

  • Preheat the oven to 400 degrees F.
  • Lightly spray a pie plate or a foil-lined baking sheet with cooking spray; set aside.
  • Combine Parmesan, breadcrumbs, and salt in a shallow dish (I use a paper plate). Place egg in a separate shallow dish.
  • Dip each side of each chicken breast in egg, then dredge in the breadcrumb mixture. Place on prepared pan.
  • Bake for 18 minutes, flipping once halfway through, until done.
  • Take the chicken out and switch the oven to BROIL.
  • Divide the sauce evenly and pour over each piece of chicken. Sprinkle evenly with the mozzarella cheese.
  • Broil 2 minutes or until the cheese melts.

Tips:

  • Use a good quality chicken breast. This will ensure that your chicken parmesan is tender and juicy.
  • Pound the chicken breasts to an even thickness. This will help them cook evenly.
  • Season the chicken breasts with salt, pepper, and garlic powder. This will add flavor to the chicken.
  • Dredge the chicken breasts in flour. This will help the bread crumbs adhere to the chicken.
  • Dip the chicken breasts in the beaten eggs. This will help the bread crumbs stick to the chicken.
  • Coat the chicken breasts in bread crumbs. Press the bread crumbs firmly into the chicken so that they adhere well.
  • Pan-fry the chicken breasts in olive oil over medium heat. Cook the chicken for 3-4 minutes per side, or until golden brown and cooked through.
  • Top the chicken breasts with marinara sauce and mozzarella cheese. Place the chicken breasts in a baking dish and bake at 400 degrees Fahrenheit for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil and serve.

Conclusion:

Chicken parmesan is a delicious and easy-to-make dish that is perfect for a weeknight meal. With a few simple ingredients, you can create a classic Italian dish that the whole family will love. So next time you're looking for a quick and easy dinner recipe, give chicken parmesan a try!
