Kransekake (18-Layer Norwegian Wedding Cake) image

Few ingredients with very helpful directions to aid you in making this. You will need graduated ring pans and a cookie press. This is a family recipe from the Petzenhausers from Lake City. Their 18 year old daughter won a blue ribbon at the 2008 Iowa State Fair for this recipe.

Time 1h30m

Yield 3 dozen, 36 serving(s)

Number Of Ingredients 6

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

Steps:

  • Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
  • Add flour and mix well.
  • Finally mix in pecans. (The batter will appear dry!).
  • Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
  • Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
  • While still hot, roll in remaining confectioners' sugar.
  • Store in an airtight container.

Tips:

  • Choose the right cake base: Swedish wedding cakes traditionally use a sponge cake base, but you can also use a vanilla cake or a chocolate cake. Just make sure the cake is moist and fluffy.
  • Make sure your marzipan is smooth: Marzipan is a key ingredient in Swedish wedding cakes, and it's important to make sure it's smooth and pliable before you use it. If your marzipan is too dry, you can add a little bit of almond extract or rose water to help soften it.
  • Don't overwork the dough: When you're making the marzipan dough, be careful not to overwork it. Overworking the dough will make it tough and difficult to work with.
  • Chill the cake before you decorate it: Chilling the cake will help to set the marzipan and make it easier to decorate.
  • Use a variety of decorations: Swedish wedding cakes are often decorated with a variety of items, such as flowers, berries, and nuts. You can also use edible glitter or sprinkles to add a touch of sparkle.

Conclusion:

Swedish wedding cakes are a beautiful and delicious tradition. With a little planning and effort, you can easily make your own Swedish wedding cake at home. Just follow the tips above and you'll be sure to impress your guests with your culinary skills.
