1 pound ground beef
1-1/2 teaspoons chili powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons salt
Pepper to taste
3 cups cooked long grain rice
1 can (7 ounces) mushroom stems and pieces, drained
1 medium green pepper, sliced
SAUCE:
1 cup plus 2 tablespoons sugar
1/3 cup cornstarch
2-1/2 cups cold water
1/3 cup white vinegar
1/3 cup ketchup
1-1/2 teaspoons salt
Pepper to taste

Steps:

  • In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the chili powder, oregano, salt and pepper. , In a greased 3-qt. baking dish, layer the rice, beef mixture, mushrooms and green pepper; set aside. In a large saucepan, combine sugar and cornstarch; stir in the remaining sauce ingredients until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Pour over layered ingredients. Bake, uncovered, at 350° for 30 minutes or until heated through.

2 lbs stew meat
2 tablespoons oil
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup white vinegar
1/2 cup pineapple juice
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 lb frozen stir fry vegetables
1 tablespoon oil
3 pineapple slices
6 cups Minute Rice

Steps:

  • Heat the 2 Tb oil in a large skillet while you chop the stew meat into bite size pieces. Fry the meat until brown.
  • While frying the meat add both sugars, vinegar, pineapple juice, worchestershire and soy sauce into a saucepan. Heat to a boil and reduce heat. Let simmer 5 minutes.
  • In a smaller frying pan heat the 1 Tb oil and add stir fry mix. Cook and stir for about ten minutes.
  • Drain the meat and combine it with the sauce and stir fry in the large frying pan. Pour the sauce over top and add the sliced pineapple cut into small pieces. Stir and simmer while you cook rice.
  • Place a serving of rice on each plate. Top with stir fry mix and serve.
  • Tip: If you want a thicker sauce just combine 1 Tb of cornstarch with 2 Tb of water in small dish and mix into stir fry before topping rice.
