2 small apples, divided
10 whole cloves
1 bottle (48 ounces) unsweetened apple juice
4 cans (6 ounces each) unsweetened pineapple juice
2 cinnamon sticks (3 inches)

Steps:

  • Core and cut one apple into 10 slices. Insert one clove into each slice. In a Dutch oven, combine juices. Add apple slices and cinnamon sticks. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. , Discard apple slices and cinnamon sticks. Core and cut remaining apple into 12 slices. 2 cups pineapple juice, divided
3 tablespoons cornstarch
1 cup white sugar
¾ cup ketchup, or more to taste
⅔ cup apple cider vinegar
2 tablespoons soy sauce, or more to taste
2 tablespoons crushed pineapple, or more to taste
1 teaspoon garlic powder

Steps:

  • Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
  • Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. 50 to 60 whole cloves
6 cups apple cider or juice
1 cinnamon stick (4 inches)
2-1/4 cups unsweetened pineapple juice
1/4 cup honey
3 tablespoons lemon juice
1 teaspoon grated lemon zest
1/4 teaspoon ground nutmeg
Additional cinnamon sticks, optional

Steps:

  • Cut orange slices in half. Using a wooden toothpick, poke holes in the peel of each orange slice at 1/2-in. intervals. Insert a clove into each hole; set aside., In a large saucepan, bring apple juice and cinnamon stick to a boil. Reduce heat; cover and simmer for 5 minutes. 8 OZ CRUSHED PINEAPPLE ( RAN THROUGH A FOOD PROCESSOR INTO A PASTE )
1 TBSP ALLSPICE
1 TBSP GROUND CLOVES
5 TBSP GROUND MUSTARD
1 1/2 - 2 CUPS OF BROWN SUGAR
GLAZE
8 OUNCE CRUSHED PINEAPPLE WITH JUICE ( RAN THROUGH A FOOD PROCESSOR )

PLACE HAM IN SMOKER WITH APPLE OR MAPLE WOOD FOR NO MORE THEN 4 HOURS, CONTINUE TO COOK TILL AN INTERNAL TEMP OF 145 -150 F, REMOVE LET STAND FOR 10 MINUTES PRIOR TO CUTTING PREPARE GLAZE, MIX THOROUGHLY AND PLACE IN SMALL CROCK POT TO HEAT, RIGHT AFTER THE SMOKING PROCESS HAS STOPPED START GLAZING THE HAM EVERY 10 TO 15 MINUTES.
