TAPIA FAMILY'S MEATLOAF

Tapia Family's Meatloaf image

My family kept turning up their noses at my meatloaf. I tried several recipes in hopes of finding one that they would all like. They told it was just too darn plain for their taste. I tried adding oatmeal or rice instead of dry bread crumbs, adding different kinds of veggies, I used canned tomatoes, or ketchup, or tomato paste, or different styles of tomato sauce, even different spices until I came up with this one. When I saw all plates clean and being asked for more, I knew I had found the one they liked and the keeper for our family.

PAULA DEEN'S OLD-FASHIONED MEATLOAF

Paula Deen's Old-Fashioned Meatloaf image

My favorite meatloaf recipe. Try using a mixture of ground beef, lamb, veal or pork instead of all beef.

Provided by aHardDaysNight

Categories     Grains

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 11

1 lb ground beef
1 1/4 teaspoons salt
1/4 teaspoon black pepper
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1 large egg, lightly beaten
8 ounces canned tomatoes with juice, diced
1/2 cup quick-cooking oats
1/3 cup ketchup
1 tablespoon prepared mustard
2 tablespoons brown sugar

Steps:

  • preheat oven to 375 degrees.
  • mix all ingredients except ketchup, mustard, and brown sugar.
  • place into baking dish and shape into loaf.
  • mix ketchup, mustard and brown sugar.
  • spread on loaf.
  • bake for 1 hour.

Tips:

  • Choose the right ground meat: For a classic meatloaf, use a combination of ground beef and ground pork. The beef provides flavor, while the pork adds moisture. You can also use ground turkey or chicken for a healthier option.
  • Use fresh ingredients: The fresher the ingredients, the better your meatloaf will taste. Use fresh ground meat, vegetables, and herbs.
  • Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Use a loaf pan: A loaf pan will help the meatloaf to hold its shape. You can also use a baking dish, but the meatloaf may not be as evenly cooked.
  • Cook the meatloaf at the right temperature: The ideal internal temperature for meatloaf is 165 degrees Fahrenheit. Use a meat thermometer to check the temperature of the meatloaf before removing it from the oven.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for 10-15 minutes before slicing. This will help the juices to redistribute throughout the meatloaf.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and loved by people of all ages. With a few simple tips, you can make a delicious and moist meatloaf that your family and friends will love. So next time you're looking for a hearty and satisfying meal, give meatloaf a try!
