Steps:
- Preheat oven to 350°F; grease and flour 2(9-inch) cake pans.
- For the cake: In a medium bowl, stir together flour and baking soda; set aside.
- Using an electric mixer, cream together shortening and sugar in a bowl until light and fluffy, about 2 to 3 minutes.
- Add eggs 1 at a time, mixing well after each addition.
- Mix in mashed bananas, buttermilk,and vanilla; add flour mixture and mix until just combined.
- Stir in walnuts.
- Pour into prepared pans, bake until a toothpick inserted comes out clean, about 35 minutes.
- Cool in pans on a cooling rack, remove from pans and cool completely.
- While cake is baking, prepare frosting.
- Melt butter in a small saucepan.
- Add brown sugar and 1/3 cup cream; cook over medium-low heat until sugar is dissolved, about 2 minutes.
- Remove from heat and add vanilla; transfer to a large bowl.
- Using a hand mixer, beat in confectioners sugar a little at a time until smooth.
- (If frosting is to thick, add 1 tablespoon heavy cream at a time until consistency is right).
- Sandwich 2 layers of cake with frosting; frost outside of the cake.
- Press chopped walnuts on sides of cake, if desired.

- Using a electric mixer, cream together shortening and granulated sugar in a bowl. Add eggs one at a time and mix well after each addition. Stir in mashed bananas,buttermilk and vanilla. BLACK WALNUT CAKE
I got this recipe from an old Army mess hall sergeant who later became a chef down in Savannah, GA. This is a wonderful, different nut cake. It is equally good served warm or cold. This cake can be wrapped and frozen 3 to 5 months. Thaw, and if desired, reheat to serve.

- Preheat oven to 325°F. Butter and flour two 9-inch-diameter cake pans with 2-inch-high sides. Sift first 6 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in jam. Beat in dry ingredients in 4 additions alternately with buttermilk in 3 additions. Fold in walnuts. Divide batter between prepared pans. Cool to lukewarm, whisking occasionally, about 15 minutes. Working in batches, sift powdered sugar into mixture, beating until smooth after each addition. Beat in vanilla extract. - Place 1 cake layer, flat side up, on serving platter. Spread 1 1/2 cups icing over top. Top with second cake layer, flat side down. Spread remaining icing over top and sides of cake. (Can be prepared 1 day ahead. Cover cake and refrigerate. Let cake stand at room temperature 2 hours before serving.)
