- Preheat the grill. Place the chicken pieces on the grill at a 45 degree angle to establish good grill marks. Once the chicken easily releases from the grill, turn it over to continue cooking. Make sure to season the chicken with salt while it's cooking. Once the internal temperature reaches 165 degrees F, or its juices run clear, remove the chicken from the grill. Let the chicken rest for 5 to 10 minutes before serving.

- Place the block of tofu onto a plate and place another plate on top. Set a 3 to 5 pound weight on top (a container filled with water works well). Place tofu pieces or skewers on a plate.
- Whisk together the lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt, and black pepper in a bowl. Brush the tofu with the marinade. Cover the plate with plastic wrap, and marinate tofu in the refrigerator for 2 hours or overnight.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Grill the tofu until almost blackened in spots, brushing occasionally with the marinade, about 10 to 15 minutes.

Tips:
- Choose the right tofu: For this recipe, it's best to use extra-firm or firm tofu. This type of tofu will hold its shape well in the marinade and won't crumble.
- Press the tofu: Before marinating the tofu, press it to remove excess water. This will help the tofu absorb the marinade better and give it a firmer texture.
- Use a flavorful marinade: The marinade is what gives the tofu its flavor, so make sure it's packed with flavor. This recipe uses a combination of ancho chiles, lime juice, garlic, cumin, and oregano.
- Marinate the tofu for at least 30 minutes: The longer you marinate the tofu, the more flavor it will absorb. If you're short on time, you can marinate the tofu for as little as 30 minutes, but for best results, marinate it for at least 2 hours.
- Cook the tofu over medium heat: Cooking the tofu over medium heat will help it cook evenly and prevent it from burning.
- Serve the tofu with your favorite toppings: Once the tofu is cooked, you can serve it with your favorite toppings. Some popular options include salsa, guacamole, sour cream, and shredded cheese.
Conclusion:
This tofu in ancho chile-lime marinade is a delicious and versatile dish that can be served as an appetizer, main course, or side dish. The marinade gives the tofu a bold and flavorful taste, and the tofu can be cooked in a variety of ways. Whether you grill it, pan-fry it, or bake it, this tofu is sure to please everyone at the table.
