TOMATILLO SALSA

Tomatillo Salsa image

This is a standard Mexican salsa that you find everywhere in Mexico. Tomatillos have a natural acidic and fresh note that gives them a little sparkle. (They keep that sparkle even after they're cooked.) Tomatillo salsa is a natural with the flavors of grilled meat, but it is a great do-ahead, have-on-hand salsa to freshen up anything off the grill or out of a skillet.

Provided by Daisy Martinez

Categories     condiment

Time 40m

Yield about 4 cups

Number Of Ingredients 7

1 pound fresh tomatillos
1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups)
3 cloves garlic
1/2 packed cup coarsely chopped cilantro leaves
1/2 jalapeno (seeds and all if you like heat)
1/2 lime, juiced
Kosher or fine sea salt

Steps:

  • Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.
  • Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.

SALSA DE TOMATILLO

Salsa De Tomatillo image

This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!

AUTHENTIC TOMATILLO SALSA

Authentic Tomatillo Salsa image

I stayed with the Ceja family a few years ago because I was nosing in on a documentary that was being filmed about their amazing family vineyard and Latino heritage. Amelia Ceja cooked meal after meal of scrumptious food, but unfortunately, this salsa is the only recipe I took away with me. It's soo good, and pretty easy to make. The tomatillos should really be done on a smoking-hot grill so you can get that smoky flavor. Yum.

Provided by My Food and Family

Categories     Salsa Recipes

Time 30m

Yield 3-1/2 cups

Number Of Ingredients 10

1 lb. tomatillos, husks removed
1 large onion, cut into quarters
8 cloves garlic, peeled
2 Anaheim pepper
1 cup fresh cilantro, chopped
1/4 cup fresh lime juice
1/2 cup HEINZ Distilled White Vinegar
1 tsp. ground cumin
1/2 tsp. red pepper flakes
1/2 cup water, more or less as needed

Steps:

  • Preheat the oven to 500°F. Line a baking sheet with foil and spray with cooking spray. Place the tomatillos, onion, garlic, and peppers on the baking sheet. Roast 15-20 minutes, or until the tomatillos have charred slightly and are starting to release their juices. Remove from oven and let cool slightly.
  • After the peppers have cooled, carefully peel off the skin. It's a good idea to wear gloves to prevent getting spicy pepper juice on your hands and then inadvertently rubbing it in your eyes. If you want your salsa spicier, leave the pepper seeds in, or for a milder salsa scrape them out.
  • Add the tomatillos, peppers, onions, and garlic to a blender or food processor. Add the cilantro, lime juice, vinegar, salt, cumin, and red pepper flakes, and pulse until it's as chunky or smooth as you would like it. Add water as needed to thin to desired consistency.
  • Pour the mixture into a medium saucepan and heat to a boil. If you're planning to refrigerate the salsa, ladle into clean containers, then let cool. Use within one week.
  • CANNING DIRECTIONS:
  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • To use this recipe for canning, start by doubling the recipe. After the salsa reaches a boil , ladle into sterilized jars, leaving 1/2 inch headspace. Add sterilized lids and bands. Process in a water bath canner for a minimum of 15 minutes, adding 5 minutes for each 2000 feet of altitude above sea level. Let cool, then store in a cool, dry place. Use within six months.

QUICK FRESH TOMATILLO SALSA

Quick Fresh Tomatillo Salsa image

Tomatillos, which are closer botanically to the gooseberry than to the tomato, have a wonderful acidic tang. To get the best out of them they should be simmered or grilled for about 10 minutes, until they're soft and the color has gone from pale green to olive. You can use them for a quick, blended salsa (like the one in this recipe) and also for a cooked salsa, which has a rounder, seared flavor. Use on tacos, or as chip or vegetable dip, or alongside grilled chicken or pork.

Provided by Martha Rose Shulman

Categories     condiments

Time 45m

Yield 2 cups, serving 8

Number Of Ingredients 6

1 pound tomatillos, husked and rinsed
2 to 4 jalapeño or serrano chiles, seeded for a milder salsa, coarsely chopped
1/4 cup chopped onion, soaked for 5 minutes in cold water, drained and rinsed
1/4 to 1/2 cup coarsely chopped cilantro (to taste)
Salt to taste (about 1/2 teaspoon)
1/4 to 1/2 cup water, as needed

Steps:

  • Place the tomatillos in a saucepan, cover with water and bring to a boil. Reduce the heat and simmer for 8 to 10 minutes, flipping them over halfway through, until softened and olive green. Remove from the heat. Transfer to a blender. Add the chiles, onion, cilantro, and 1/4 cup water to the blender and blend to a coarse puree. Transfer to a bowl, add salt, and thin out as desired with water. Taste and adjust salt, and set aside for at least 30 minutes before serving, to allow the flavors to develop.

COOKED TOMATILLO SALSA

Cooked Tomatillo Salsa image

Provided by Martha Rose Shulman

Categories     condiments

Time 40m

Yield 2 cups

Number Of Ingredients 8

1 pound fresh tomatillos, husked and rinsed, or 2 13-ounce cans, drained
2 or 3 jalapeño or serrano chiles, stemmed, seeded for a milder salsa
1/4 cup chopped white onion, soaked for 5 minutes in cold water, then drained and rinsed
2 large garlic cloves, peeled
1/2 cup chopped cilantro
1 tablespoon grapeseed oil, sunflower oil or canola oil
2 cups chicken stock or vegetable stock
Salt to taste (1/2 to 1 teaspoon)

Steps:

  • Place the tomatillos in a saucepan, cover with water and bring to a boil. Reduce the heat and simmer for 8 to 10 minutes, flipping them over halfway through, until softened and olive green. Drain and place in a blender. Add the chiles, chopped onion, garlic, salt, and cilantro sprigs. Blend until smooth.
  • Heat the oil in a large, heavy saucepan or skillet over medium-high heat until it ripples. Drizzle in a drop of tomatillo purée to test the heat. If it makes a lot of noise and sputters immediately, the oil is hot enough. Add the tomatillo purée, and stir constantly until it thickens and begins to stick to the pan, about 5 minutes. When you run your spoon down the middle of the pan it should leave a canal. Stir in the stock, bring to a simmer, and simmer 10 to 15 minutes, stirring often. The sauce should coat the front and back of your spoon. Taste and adjust seasoning. Remove from the heat. Serve warm or at room temperature.

TOMATILLO SALSA BY MARINA

Tomatillo Salsa by Marina image

This salsa is the absolute best....Every time we attend a party, Marina is asked for the recipe. She always hesitates, as she says it is too easy to be a recipe, as all ingredients are to taste. I've tried to measure out ingredients but as Marina stated, add to your own taste.

Categories     Very Low Carbs

Time 20m

Yield 3 cups, 8-10 serving(s)

Number Of Ingredients 6

20 dried chilies, Japones (Japanese Chili Peppers) or 20 dried arbol chilies
6 garlic cloves, chopped
1 cup cilantro, chopped
1 small onion
15 tomatillos
5 green onions, chopped

Steps:

  • Toast the chile Japones in a hot cast iron frying pan. Be careful as the fumes are really strong.
  • Peel the papery skin off the tomatillos and boil in water until they turn a yellowish color or until they are soft (about 10-15 minutes).
  • Put the toasted chilies, garlic, onion and cooked tomatillos in a food processor and mix until well blended and chilies are tiny flecks. If too thick, add a little of the tomatillo water.
  • Pour into a container and add the chopped green onions and chopped cilantro. Mix well. Store in refrigerator.

Tips:

  • Choose ripe tomatillos: Look for tomatillos that are firm and have a bright green color. Avoid any that are bruised or have blemishes.
  • Roast the tomatillos: Roasting the tomatillos brings out their natural sweetness and flavor. You can roast them in the oven or on a grill.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the salsa. If you don't have fresh cilantro, you can use dried cilantro, but it won't have the same flavor.
  • Don't overcook the salsa: The salsa should be cooked just until the tomatillos are softened and the flavors have melded together. Overcooking the salsa will make it lose its fresh flavor.
  • Serve the salsa immediately: Tomatillo salsa is best served immediately after it is made. However, you can also store it in the refrigerator for up to 3 days.

Conclusion:

Tomatillo salsa is a delicious and versatile condiment that can be used in a variety of dishes. It is made with roasted tomatillos, onions, garlic, cilantro, and chili peppers. The salsa is typically served fresh, but it can also be stored in the refrigerator for up to 3 days. Tomatillo salsa is a great addition to tacos, burritos, enchiladas, and other Mexican dishes. It can also be used as a dip for chips or vegetables.
