Time 2h15m

Yield 6-8 serving(s)

Number Of Ingredients 7

3 medium cucumbers, peeled and chopped
2 medium tomatoes, chopped
1 small red onion, chopped
1 (5/8 ounce) package Good Seasonings Italian salad dressing mix, prepared per package directions
2 garlic cloves, finely chopped

Steps:

  • Combine cucumbers, tomatoes, onions, garlic and feta in a large plastic bowl with a lid. Prepare Italian dressing per package directions. Pour dressing over into bowl and stir to coat evenly. Salt and pepper to taste. Cover bowl with lid and refrigerate for at least 2 hours before serving, as salad is best when served cold. Enjoy! Variations of this salad are easily made by changing the type of cheese you use. I have also used crumbled Gorgonzola (when served with steak), shredded sharp cheddar (when served with burgers and hot dogs), and chopped fresh mozzarella (when served with lasagna), depending on the dinner I was serving with the salad.

TOMATO SALAD WITH CUCUMBER AND FETA

Tomato Salad With Cucumber and Feta image

Serve this on a large fancy serving dish and sprinkle generously with salt and pepper. I have served this many times at my dinner parties... not only is this beautiful to look at, it is absolutely delicious!. Olives can be replaced with capers if desired, and oregano can be replaced with fresh basil. Plan ahead this salad needs to be left out at room temperature for 1 hour or refrigerated for 3 hours before serving. Another variation for this salad is layer mozzarella cheese in between the veggies and omit the feta, it is just as good both ways, but I have to say that the feta is better. Be certain to only use an firm English cucumber for this, otherwise the salad will get watery. This salad should serve up to 6 people, increase all ingredients if serving more. If you are serving this chilled I strongly suggest to let the salad sit out for 1 hour at room temperature before serving, the tomatoes will soften and taste better, tomatoes really should not be refrigerated, they permanently loose their taste and texture. You will love this salad!

TOMATO-CUCUMBER-FETA SALAD

Tomato-Cucumber-Feta Salad image

This cooling summer salad is great for using up veggies from the garden. Great as a side with grilled meats or seafood or as a salsa to give grilled sea bass pizazz. *Prep time includes minimal refrigeration to set the tastes

Provided by TishT

Categories     Sauces

Time 2h

Yield 8 serving(s)

Number Of Ingredients 10

6 large ripe tomatoes, cut into 1/2-inch dice
2 seedless European cucumber, cut into 1/2-inch dice
1/2 cup red onion, chopped
1 1/4 cups olive oil
1/2 cup red wine vinegar
1 (1 1/2 ounce) envelope savory herb with garlic soup mix
1/4 cup fresh dill, chopped
1/2 teaspoon fresh ground black pepper
1 cup crumbled feta cheese
1 bunch parsley

Steps:

  • Place the tomatoes, cucumbers, and onion in a large serving bowl.
  • In a small mixing bowl, whisk together the oil, vinegar, soup mix, dill, pepper, and feta.
  • Pour the dressing over the vegetables and toss until combined.
  • Refrigerate the salad for up to 6 hours before serving.
  • Garnish with parsley before serving.

Tips:

  • Choose ripe, flavorful tomatoes. This is key to making a delicious salad. Look for tomatoes that are bright red and have a slight give when you gently squeeze them.
  • Use a variety of cucumbers. This will add different flavors and textures to your salad. Try using English cucumbers, which are mild and crisp, or Persian cucumbers, which are sweeter and have a thinner skin.
  • Don't skimp on the feta cheese. Feta adds a salty, tangy flavor that really complements the tomatoes and cucumbers. Use a good quality feta cheese that is made from sheep's milk or a blend of sheep's and goat's milk.
  • Use fresh herbs. Fresh herbs, such as basil, oregano, or mint, can really brighten up the flavors in this salad. If you don't have any fresh herbs on hand, you can use dried herbs, but use about half the amount.
  • Let the salad marinate. This allows the flavors to meld and develop. You can marinate the salad for as little as 30 minutes or for up to overnight.

Conclusion:

This tomato cucumber feta salad is a refreshing, flavorful, and healthy dish that is perfect for summer. It is easy to make and can be tailored to your own taste preferences. Experiment with different types of tomatoes, cucumbers, and herbs to find the perfect combination for you.
