THE BEST CRANBERRY SALAD!
This is just FABULOUS! Mainly for holidays, or special occasions. I got the recipe from my sister-in-law. She has a couple of recipes that she makes every year at holidays, and this is one of them. She gave it to me, and now, I make it for the other side of the family, and for friends. It's Great!

Steps:
- Mince cranberries with a hand-blender, food-processor, or some kind of chopper.
- I use my Braun hand-blender, and the little cup it came with, which is used to chop things really small (rather than pureeing them, which the blender would probably do, if I used it without the cup).
- But you only fill it a 1/4 to a 1/2 full each time, or they won't be minced properly.
- (cranberries may be prepared up to 3 days in advance) In a bowl, mix the first four ingredients, and refrigerate for at least one hour, best if overnight.
- In the morning, or shortly before serving, whip the whipping cream until it peaks.
- Set aside.
- Add the marshmallows to the cranberry mixture, until thoroughly incorporated into the mix.
- Then slowly fold in the whipped cream, until it's completely mixed.
- Refrigerate until serving.

- Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.
- Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.
- Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.
- Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.

- Open and drain all liquid from pineapple.
- In casserole dish fix Jell-o with hot water only, stir until dissolved.
- Add can of cranberry sauce (I use a whisk to help break it up and remove from can).
- Gently stir until thoroughly mixed.
- Add pineapple, stir.
- Cut whole strawberries into halves or quarters, gently stir berries into jell-o mixture.
- Cover and refrigerate until set, usually a few hours.
- As salad sets out some watering effect will occur, but not harmful.

SOUDER FAMILY CRANBERRY JELLO SALAD
Its not Thanksgiving for me unless I have cranberry jello salad. This recipe comes from my mother's side of the family and has been a tradition at Souder Thanksgiving meals for as long as I have been alive. Super easy and delicious! Cooling and chilling take several hours, so prepare at least a day before you plan on serving. I always double the recipe; if you do this, split between at least two containers before chilling or it will take forever to set. (Its still good if it doesn't set!)

- Cook cranberries and sugar in 1 1/2 cups of water until cranberries have popped (split open).
- Pour raspberry gelatin mix into cooked cranberries and stir until dissolved.
- Add 2 cups cold water and let cool for 2 hours.

- Mix in celery, walnuts and undrained crushed pineapple.
