TROPICAL MANGO AND PINEAPPLE PARADISE SALSA

Tropical Mango and Pineapple Paradise Salsa image

This is a delightfully fresh salsa with a slight kick, that is super tasty with jerk chicken, grilled seafood, quesadillas or warm corn chips (especially blue ones - the colors are fabulous together!). Plus, it is super easy to make! This salsa is fairly mild, although the onion does pack some punch. I like it this way as a contrast to more spicy Mexican or Caribbean dishes, and because it really allows the yummy fruit flavors to shine!! However, you can add some fresh jalapeno or other pepper if you want it more spicy.

BLACK BEAN, TROPICAL FRUIT AND QUESO BLANCO SALSA

Black Bean, Tropical Fruit and Queso Blanco Salsa image

My talented friend chef Douglas Rodriguez gave me the inspiration for this salsa at a fantastic party he threw. Queso blanco, a staple of Latin cuisine, is uniquely textured, simply yet assertively flavored and quite pleasant to nibble. In this recipe, the cheese balances the acidity of the orange and mango. A no-brainer with chips, queso blanco salsa is a great accompaniment to grilled chicken breasts as well. You can prepare the dressing up to a day before you assemble the salsa. And the salsa is also good a day after - assuming there is any left over.

Provided by Food Network

Categories     side-dish

Time 20m

Yield 4 servings

Number Of Ingredients 19

1 cup well-rinsed, canned black beans
1/3 cup finely diced red bell pepper
1/4 cup finely chopped scallions, white and light green parts only
1 Scotch bonnet chile, stemmed, seeded, and minced
3/4 cup crumbled queso blanco
3/4 cup diced mango
1/2 cup coarsely chopped orange sections
1 1/2 teaspoons Spanish sherry vinegar
Kosher salt and freshly ground black pepper
1 tablespoon fresh orange juice
1 cup diced ripe avocado
1 1/2 teaspoons minced shallot
1 clove garlic, minced
1 tablespoon coarsely chopped Italian parsley
1/2 teaspoon toasted and ground cumin seeds
1/4 teaspoon freshly ground black pepper
Kosher salt
2 tablespoons Spanish sherry vinegar
1/4 cup extra-virgin olive oil

Steps:

  • To make the Salsa: In a large bowl, combine all the ingredients except the avocado in the order listed. Very gently, fold in the avocado, to avoid smashing the delicate ingredients. Cover and refrigerate until chilled.
  • To make the Dressing: In a small bowl, combine all ingredients and whisk them well. Cover and refrigerate. To serve, gently fold the dressing into the salsa. Season to taste and serve.

SPICY TROPICAL FRUIT SALSA

Spicy Tropical Fruit Salsa image

Other combinations of fruits will also taste great in this colorful salsa. Try adding diced melon, such as cantaloupe, honeydew, or musk. Diced mango is delicious also, or, for a truly tropical and exotic salsa, add sliced star fruit (also known as carambola). As with any of my recipes calling for habanero's, you as chef, can substitute with any other capsicum. From "The Habanero Cookbook" by Dave DeWitt and Nancy Gerlach.

1 cup chopped fresh mango

Tips:

  • Use ripe and fresh ingredients: The fresher the ingredients, the better the salsa will taste. Look for ripe tomatoes, onions, peppers, and cilantro.
  • Choose the right type of tomatoes: There are many different types of tomatoes, each with its own unique flavor and texture. For salsa, you want to use a tomato that is firm and juicy, such as Roma or plum tomatoes. Avoid using soft or watery tomatoes, as they will make your salsa runny.
  • Dice the ingredients evenly: This will help ensure that the salsa has a consistent texture. If you dice the ingredients too finely, they will lose their flavor. If you dice them too coarsely, they will be difficult to eat.
  • Season the salsa to taste: Add salt, pepper, and lime juice to taste. You may also want to add other seasonings, such as garlic, cumin, or chili powder.
  • Chill the salsa before serving: This will allow the flavors to meld together and will make the salsa more refreshing.

Conclusion:

Tropical salsa is a refreshing and flavorful condiment that can be used to add zest to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild or spicy, fruity or savory, there is a tropical salsa recipe out there for you.
