A tuile is a crisp, thin cookie that adds a bit of sweetness and crunch to servings of ice cream, sorbet, mousse and other creamy desserts. These plain tuiles are good, but tuiles are also commonly flavored with cocoa, orange, espresso and other flavors. Tuiles are pliable when just baked and still warm, so you can shape them into the traditional curved shape.

7 tablespoons (100 grams) unsalted butter, softened
3/4 cup plus 2 tablespoons (100 grams) confectioners' sugar
2/3 cup (97 grams) all-purpose flour
3 large egg whites

Steps:

  • In an electric mixer fitted with the paddle attachment, beat the butter at medium speed until creamy, about 30 seconds. Add the confectioners' sugar and flour and mix until combined. Add the egg whites one at a time, beating after each addition just until well blended, about 1 minute in all. Refrigerate the batter for 30 minutes.
  • Preheat the oven to 350 degrees F. Have a rolling pin at hand. Spray a baking sheet with nonstick cooking spray or line it with parchment paper.
  • Spoon 2 teaspoons of the batter onto the baking sheet and with a small, offset metal spatula, spread it evenly into a 3-inch circle. Repeat to form more tuiles, baking only 6 to 8 at a time. Refrigerate the remaining batter while you bake the tuiles.
  • Bake the tuiles for 4 to 6 minutes, until lightly browned around the edges. Remove from the oven and immediately shape the tuiles, lifting up each one with a metal spatula and draping it over the rolling pin so it curves, just until set. Repeat with the remaining batter. Store the tuiles in a cool dry place in an airtight container for up to 1 week.

VANILLA OR CHOCOLATE TUILES

1 cup confectioners' sugar, sifted
4 egg whites
½ teaspoon vanilla extract
1 cup cake flour

Steps:

  • Beat butter and sugar together with an electric mixer on medium-high speed. Beat in the egg whites, one at a time. Beat in the vanilla.
  • Lower the speed and add the flour or flour-cocoa mixture (see Cook's Note) and mix until just combined. Do not overmix. Cover bowl and chill for at least 1 hour.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut a small hole (about 3 1/2 inch diameter) in a thin piece of cardboard or plastic to serve as a template in forming the tuiles. Line a cookie sheet with parchment paper or a silicon mat and place the stencil on it. Using a small off-set spatula, place a small amount of the batter in the center of the hole of the stencil and spread it out evenly. Carefully lift the stencil off. Repeat for more cookies.
  • Bake in preheated oven until lightly brown around the edges, 8 to 10 minutes. Remove from the oven and while still hot, remove tuiles from the pan and drape them over a rolling pin. Allow to sit a few minutes to harden and cool. Store in an airtight container.

1/3 cup flour
1/2 cup plus 2 Tbsp. granulated sugar
1 pinch salt
3 egg whites from large eggs
2 1/2 Tbsp. melted unsalted butter
3 Tbsp. (approximately) melted butter to grease the parchment paper
2 Tbsp. (approximately) milk

Steps:

  • Sift the flour, sugar, and salt into a small mixing bowl. Add the egg whites and then the melted unsalted butter, and whisk until just combined. Set the batter aside to rest for 1 1/2 hours before using, or cover and refrigerate for up to 3 days.
  • Preheat the oven to 350°F. Heavily butter 3 pieces of parchment paper, and place one each on three baking sheets. Using 1 1/2 Tbsps. per tuile, spoon the batter onto the baking sheets, 5 per sheet. The cookies should be at least 2 inches apart, as they spread during baking. Dipping a finger in the milk first, spread each cookie into a 3-inch round. To insure even baking, make the edges no thinner than the centers.
  • Bake the tuiles 8 to 10 minutes, or until the edges are golden and the centers are just beginning to color. Remove the cookies from the oven. As soon as they are cool enough to handle, remove the tuiles from the baking sheets and drape them around rolling pins or wine bottles. If the cookies become too cool and stiff to bend, return them to the oven for a minute or so and they will soften up.

LACY LEMON TUILES

These are small, delicate little cookies which look like tiles, hence the name "tuiles". They take a little practice to get just right, but are really worth the effort. They are great with sorbets, glacees, fruit salads, or just on their own with tea. Prep time does NOT includes cool down time in fridge. I leave the cookie dough chilling overnight . I've described how to get the shape for the curly tile, but you can leave them flat, or drape over a glass for additional shapes. This is not a large amount of batter - you can always double or triple the amount.

1/4 cup all-purpose flour
1 tablespoon butter, melted

Steps:

  • Preheat oven to 325°F. Coat a heavy baking sheet well with cooking spray or line with parchment paper.
  • In a bowl whisk together ground almonds, flour, sugar, and salt and whisk in whites, butter, and almond extract until combined well. Drop rounded teaspoons batter about 4 inches apart onto baking sheet and with back of a spoon spread into 3 1/2-inch rounds. Sprinkle each cookie with about 1/2 tablespoon sliced almonds and bake in middle of oven 8 minutes, or until golden.
  • Working quickly, remove cookies, 1 at a time, from baking sheet with a thin spatula and drape over a rolling pin to create a curved shape. (If the cookies become too brittle to form on the rolling pin, return baking sheet to oven a few seconds to allow cookies to soften.) Cool cookies completely on rolling pin and transfer to an airtight container. Make more cookies with remaining batter in same manner, spraying or lining baking sheet for each batch. Tuiles may be made 2 days ahead and kept in an airtight container at room temperature.

1 cup all-purpose flour
3/4 cup fresh orange juice
2 tablespoons fresh lemon juice
14 tablespoons unsalted butter, melted and cooled to room temperature
3/4 teaspoons grated lemon zest
3/4 teaspoons grated orange zest
Buttercream, recipe follows
Raspberries, for garnish
1/2 cup egg whites
1/2 cup sugar
8 ounces (2 sticks) softened butter
4 ounces softened goat cheese (recommended: mild Coach Farms)
1 teaspoon vanilla

Steps:

  • Using an electric mixer fitted with the whisk attachment, mix together the sugar and flour until well combined. With the mixer on low speed, drizzle in the orange juice and the lemon juice and mix until smooth. Drizzle in the cooled melted butter slowly and add the zests. Increase the speed to medium and mix until the batter is completely smooth. Refrigerate at least 4 hours (overnight is best).
  • Preheat the oven to 350 degrees F. For each tuile, drop a heaping teaspoon of batter onto a non-stick baking sheet with a non-stick liner, leaving three inches in between. Using a small, offset spatula or the back of a spoon dipped in cold milk to prevent sticking, gently pat each mound of batter into a very thin, even 4-inch round. Bake tuiles until they are golden brown all over, 9 to 11 minutes.
  • Using a cannoli mold and working very quickly, roll each tuile around the mold. When the tuiles have cooled, carefully slide off the mold. Tuiles may be made smaller to form around mini tuile molds.
  • Using a piping bag fitted with a star tip, fill each tuile shell with buttercream. Garnish with fresh seasonal fruit.
  • Place egg whites and sugar in a stainless steel mixing bowl. Set bowl in a pot of simmering water, whisking constantly, until hot to the touch. Place whites in the bowl of an electric mixer fitted with the whisk attachment. Whip on highest setting until whites are cool and stiff. Add softened butter bit by bit until all the butter has been added. Add the vanilla and the softened goat cheese bit by bit until all has been added and the buttercream is stiff.

  • Preheat an empty medium nonstick skillet over medium heat for 2 minutes. Sprinkle a scant 3 tablespoons of the cheese into the skillet, making an oval about 4 by 2-inches. ALMOND TUILES

I recently adopted this recipe having loved it when I prepared it myself. They are a bit of work, but the results are delicious and impressive. I do not plan to change the recipe but may add some hints from my own experiences. Orignal chef's comments: These are very simple fancy cookies to be served either alone or with a mousse, ice cream, fruit, custard or most anything. They can be formed into cups to hold your dessert. This is a simple and foolproof recipe which I make at work all of the time. Prep time does not include chilling the batter overnight. Recipe adapted from David Blom

1/2 cup heavy cream
2 ounces unsalted butter, cut into 8 pieces
1/8 teaspoon vanilla
3/4 cup blanched coarse ground almonds
2/3 cup sugar
2 tablespoons flour
1 grated orange, zest of
2 ounces bittersweet chocolate, melted, for decoration

Steps:

  • Put the cream and butter in a small saucepan and heat over medium heat until the butter melts.
  • Remove from heat and stir in the vanilla.
  • Put the almonds, sugar, flour and zest in a medium bowl and stir to mix thouroughly with a rubber spatula.
  • add warm cream mixture and stir with spatula until batter is smooth.
  • Cover the batter with plastic wrap and refrigerate until THOROUGHLY chilled and thickened- preferably overnight.
  • The batter can be made ahead and refrigerated, wrapped airtight, for 4 days.
  • Baking the Tuiles: Preheat the over to 325 degrees and place your oven rack in the middle or lower third of the oven.
  • You will need a rolling pin, wine bottle or some other cylindrical object to form the tuiles.
  • They can also be formed over the bottom of a cup to make a container for mousse or berries etc.
  • Stir the chilled batter to remix.
  • Drop batter onto a parchment or silpat lined sheetpan, allowing 1 teaspoon of batter for each tuile.
  • Leave 2 inches between each one.
  • There is no need to spread out the batter- it will spread itself.
  • You can make these larger if you want, but will have to adjust baking times accordingly.
  • Bake the tuiles for 5-8 minutes until they spread and turn honey brown.
  • DO NOT LEAVE THE KITCHEN- the tuiles will go from almost done to overdone in a very short time.
  • Remove sheetpan and allow to cool for about 30 seconds.
  • Forming the Tuiles: slide the tuiles back and forth with your fingers or a spatula to release them.
  • Pick them up one by one and lay on the rolling pin.
  • Press lightly on the tuile with your hand to get a nice curved shape.
  • The cookies will mold and cool in a few seconds, so you should remove the shaped cookies as soon as you need room on the rolling pin for more.
  • If the tuiles become cool and hard to remove from the sheetpan, put them back in the oven for 1 minute and then continue.
  • Repeat with the rest of the batter making sure that the sheetpans cool between batches.
  • Decorating the tuiles: Scrape the melted chocolate into a parchment cone or plastic zip-lock bag.
  • Snip the end making a tiny hole and pipe very thin lines across the tuiles.
  • You can also use a fork dipped into the chocolate and then waved back and forth over the tuiles.
  • Serve as soon as the chocolate sets.

  • Preheat oven to 350 degrees. Butter two 8-by- 12-inch cake pans, and line with parchment paper. Butter parchment, and lightly dust with cocoa powder; set aside. Sift cocoa powder, flour, baking powder, and salt into a medium bowl; set aside.
  • Put butter and sugar into the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, 3 to 4 minutes. Mix in eggs, 1 at a time, and vanilla. Reduce speed to low. Add cocoa mixture in 2 batches, alternating with the buttermilk.
  • Divide batter evenly between pans. Bake until a cake tester inserted into centers comes out clean, about 35 minutes. Let cool on a wire rack 15 minutes. Invert cakes onto rack; remove parchment, and reinvert. Let cool completely.

Steps:

  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper. Pulse the sugar and 2 tablespoons sesame seeds in a food processor until finely ground.
  • Transfer the ground sesame mixture to a medium saucepan and add the butter, orange zest and juice, cornstarch and salt. Cook, stirring occasionally, until the mixture comes to a simmer and thickens slightly, about 3 minutes. Transfer to a large bowl; stir in the flour, vanilla and the remaining 2 tablespoons sesame seeds. Refrigerate until cooled and thickened, about 45 minutes.

1/2 stick (1/4 cup) unsalted butter, softened

2 large egg whites
1/4 cup all-purpose flour
Special Equipment
a nonstick bakeware liner such as Silpat; a pastry bag fitted with a 1/4-inch plain tip; a small offset spatula; a 1 1/2- to 2-inch diameter rolling pin or wooden dowel

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with nonstick liner.
  • Grind sugar and zest in a food processor, pulsing 4 or 5 times, until combined well, then transfer to a bowl. Add butter and vanilla and beat with an electric mixer at medium speed until pale and fluffy, 3 to 5 minutes. Reduce speed to low, then add egg whites and mix until just combined, about 30 seconds. Green Tea Panna Cotta with Sweet Adzuki Sauce Cherry Blossom Jam and Tuiles image

1/2 cup strong green tea, cold - preferably Sakura (Cherry Blossom) Flavored Green Tea
1 tablespoon unflavored gelatin (1 envelope)
3/4 cup milk
3/4 cup heavy cream
1/2 cup sugar
2 teaspoons vanilla extract
8 pickled cherry blossoms
1 (16-ounce) can adzuki beans
1/4 cup sugar
2 tablespoons canola oil
4 (8 1/2-inch) square or 10 (1/2-inch) square spring roll wrappers (rice wrappers), cut into fourths with a pizza cutter
1/4 cup powdered sugar

Steps:

  • For the panna cotta, stir together the green tea and gelatin and set aside briefly. Combine milk and cream in a saucepan over medium heat and whisk in sugar. Heat to boiling and remove from heat. Add vanilla and gelatin/tea mixture and stir until sugar and gelatin are completely dissolved. Pour into the custard cups and refrigerate at least 4 hours until gelatin sets up completely.
  • Heat adzuki beans and sugar over medium heat stirring to dissolve sugar. Allow to cool and puree in a blender with canola oil. Strain into a bowl and set aside until needed.
  • Preheat oven to 375 degrees F. Line 1 baking sheet with a silicone baking mat and lay rice wrapper squares on mat. Top with another silicone baking mat and a second baking sheet as a weight. Bake for 15 minutes, then remove the baking sheet and top silicone mat and allow to further bake until brown, about 3 more minutes. Remove from mat with a thin spatula and allow to cool completely.
  • Sift powdered sugar over the tuiles. Spoon some sauce into the center of a dessert plate. Invert the custard from the mold into the center of the sauce. Slide 2 tuiles horizontally into the custard 1 on each side. Top custard with 1 cherry blossom. Serve with hot cherry blossom tea.

Steps:

  • Preheat oven to 375°F with rack in middle. Line a large baking sheet with liner.
  • Whisk together all ingredients except sliced almonds until smooth.
  • Spoon 2 teaspoons of batter for each cookie, 2 inches apart, on baking sheet (about 6 cookies). Using an offset spatula or the back of a small spoon, spread each into a 3-inch round. Sprinkle about 1 teaspoon sliced almonds on each cookie.

1/4 pound butter, softened at room temperature
1 cup powdered sugar
1/4 cup honey
1/2 cup egg whites
1 cup sifted all-purpose flour
1/8 cup white sesame seeds

Steps:

  • Cream butter and sugar using a paddle. Add honey and mix. Add whites and mix. Add flour and mix. A proper tuile batter is smooth. On a fiberglass mat or parchment paper, spread tuile batter evenly and thinly into 5 to 6-inch rounds by using a wet finger, circling outward. Sprinkle with sesame seeds. Bake at 300 degrees until tuiles are brown. Check often. Tuiles can be shaped when they are still hot. Place them in muffin tins or ramekins to form a cup shape. Work quickly.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large cookie sheet.

2 tablespoons unsalted butter
1/4 cup confectioners' sugar
1 1/2 teaspoons finely chopped lemon zest
3 tablespoons honey
1/3 cup flour
3 tablespoons rolled oats, lightly toasted
12 fresh figs
1/2 cup simple syrup, (equal amounts water and sugar heated until sugar dissolves), cooled
2 tablespoons port
6 tablespoons heavy cream
2 ounces goats' cheese
2 tablespoons granulated sugar
Goats' Cheese Ice Cream, recipe follows
Spicy Fig Sauce, recipe follows
1 tablespoon baby thyme sprigs
2 cups heavy cream
1/2 cup milk
4 egg yolks
1/4 cup sugar
3 tablespoons corn syrup
4 ounces goat cheese
2 tablespoons granulated sugar
1/4 cup freshly squeezed orange juice, warm
1/2 cup chopped fresh figs
1 star anise
3 whole black peppercorns

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the tuiles: In a mixer fitted with a paddle, cream the butter, sugar, and lemon zest. Add the honey and flour and mix well. Spread about 1/2 teaspoon of the batter onto a Silpat-lined or nonstick sheet pan. Use a small offset spatula to spread the tuile into a 1 3/4-inch circle. Repeat the process, making at least 18 tuiles (the extra will allow for breakage). Sprinkle the top of each tuile with a pinch of rolled oats, reserving 1/2 tablespoon for garnish. Bake for 5 minutes, or until golden brown. (The tuiles may be cut with a ring cutter after cooking for a more precise shape.) Immediately transfer the tuile to a countertop or other flat surface to cool.
  • To prepare the figs: Cut the tops off 6 of the figs. Use a small spoon to press a cavity into each fig and dip the whole fig in the simple syrup. Fill the figs with the port. (If the figs have any holes in the bottoms, cut small pieces off the tops to fill the holes.) Place the filled figs on a sheetpan and bake at 350 degrees for 25 minutes, or until they have softened. Slice the remaining 6 figs in half lengthwise and then cut them crosswise into 1/4-inch thick slices. Warm the slices in the remaining simple syrup.
  • To make the goat cheese cream: Thoroughly combine 2 tablespoons of the heavy cream with the goat cheese and granulated sugar. Whisk the remaining 1/4 cup cream until it reaches soft peaks and fold into the goat cheese mixture.
  • To assemble, place 3 to 4 fig slices on one half of each plate. Place a small spoonful of the goat cheese cream on the figs and top with a tuile. Spoon another small spoonful of the cream, 3 to 4 fig slices, another tablespoon of the cream, and a tuile on top of the first stack. Build another layer with a spoon of cream, figs, another spoonful of cream, and a tuile. Place a roasted fig alongside the stacked figs and top with a quenelle of Goat Cheese Ice Cream. Spoon the Spicy Fig Sauce around the plates and sprinkle with the thyme sprigs and the remaining 1/2 tablespoon oatmeal.
  • Prepare an ice water bath. Bring the cream and milk to a boil. Whisk together the egg yolks, and sugar, and slowly pour in some of the hot cream to temper the eggs. Pour the eggs into the cream and continue to cook for 2 to 3 minutes, or until the mixture coats the back of a spoon and steam rises from the top. Whisk together the corn syrup and goat cheese and then whisk this mixture into the cream mixture until smooth. Strain through a fine-mesh sieve and chill over the ice water bath. Freeze in an ice cream machine. Keep frozen until ready to use.
  • Cook the sugar in a heavy-bottomed saute pan over medium heat for 3 minutes, or until golden brown. Add the orange juice and bring to a boil. Add the figs, star anise, and peppercorns, bring to a boil, and cook for 3 minutes. Remove from the heat and strain through a fine mesh sieve, pushing on the solids to remove as much liquid as possible. If necessary, thin with a little warm water to a make a sauce consistency.

8-10 very thin slices round unsmoked pancetta
1 tube (18 oz) precooked polenta, sliced into 1/2" thick rounds (about 16 slices)
1/2 pint cherry tomatoes, halved
1.5 tbsp plus 1 tsp extra virgin olive oil
kosher salt and freshly ground black pepper
1 tbsp freshly squeezed lemon juice
1 or 2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp worcestershire sauce
1 tsp chopped fresh chives
1 generous pound 26/30 count raw shrimp, peeled and deveined, tails removed, blotted gently with paper towels to dry

Steps:

  • Prehat the oven to 400 with a rack in the center position. Line a sheet pan with parchment paper. Line a plate with paper towels. Place the pancetta rounds side by side on teh prepared pan and bake until crisp, 5 to 7 mins. Remove to the lined plate to cook and drain; set aside (keep the parchment on the sheet pan). Place the polenta rounds on the used sheet pan, right on top of the pancetta drippings, positioning them closely together so they form a kind of raft. In a large bowl, toss together the cherry tomatoes with 1 tsp olive oil, 1/4 tsp salt, and 1/4 tsp pepper. Scatter the tomatoes around and on top of the polenta. Bake the polenta and tomatoes for about 10 mins. Meanwhile, whisk together the remaining 1.5 tbsp olive oil with the lemon juice, garlic, oregano, worcestershire sauce, 1/4 tsp salt, 1/4 tsp pepper, and the chives in a large bowl. Add the shirmp and toss to coat. Set them aside at room temp to marinate while the polenta and tomatoes cook. After the polenta and tomatoes have baked for 10 mins, arrange shrimp on top in a single layer (make sure the shrimp do not overlap) and return the pan to the oven. Bake until the shrimp are pink and just cooked through, an additional 8 to 10 mins. Serve the shrimp, tomatoes, and polenta warm, with the pancetta tuiles on top.
